The Melancholy of Haruhi Suzumiya is my favorite and the one that got me passed the action amime category. it opened me up to Lucky Star, K-On, Clanned and many others

Everyone in the thread has already recomended Code Geass and they're right. If you like it check out Death Note (Some people say it's better if you read the Manga but I still loved the show) Darker Than Black is also stellar.

You said you loved Cowboy Bebop. I loved Cowboy Bebop too but I thought Outlaw Star was better.

Here's some completely awesome amimes Mai Hime, Ergo Proxy, Read or Die, Hellsing, FLCL, Elfen Lied and Claymore.

The best one that I've seen recently is Rin: Daughters of Mnemosyne. It's NSFW, just to warn you. I wish I could find more like it. It's too short, only 6 episodes (and you can find it on Netflix) I'd say it's a better version of Kiddy Grade.

I recommend all the bold amimes but if I had to choose a favorite I'd say it bounces back and forth between The Melancholy of Haruhi Suzumiya and Mai Hime

Oh hold on there are anime movies as well. Read or Die, Princess Mononoke, Ponyo, Spirited Away and Paprika

I haven't watched much other anime, but I'd say The Melancholy of Haruhi Suzumiya is one of my favourite series of all time.

Hellsing Ultimate series are pretty good also loved FMA Brotherhood really well done series.

Berserk is good if your willing to overlook the fact it's about 10 years old and the animation by todays standards is quite poor, luckily the story, characters and setting transcends it all to make one powerful compelling piece of fiction.

If you don't mind the violence :)

In addition to most of the stuff already mentioned:
Princess Tutu, an awesome magic girl deconstruction with great characters and a fun plot
The Sayonara Zetsubo Sensei series,one of my favorite comedy series, with off the wall social commentary,taking things to their logical extremes, and poking fun at anime and Japanese pop culture.
Haibane Renmei,a slow paced series that says so little but gets across so much.
Daughter of 20 facesIf you can stay on after the massive left turn that is episode 6 then your in for an enjoyable series with some fun fight scenes.


Also,Eve No Jikan,I'm not going to describe it look it up and watch it.
