My two favourite are:
Ghost in the Shell SAC opening and closing respectively.
Thuogh there are a few other good ones that I will post when I remember.

Cowboy Bebop, Samurai Champloo, Ghost in the Shell: Stand Alone Complex & Second Gig and anything by Yoko Kanno.
Being an enjoyer of Classical Music(sort of) I enjoy the Rosen Maiden soundtrack... and to totally kill that idea, I also enjoy the Haruhi Suzumiya Character songs (particularlly Tsuryua-san but I guess that was obvious nyoro~!

Sorry for my awesome quintuple post, but here's the opening to Bokurano, an anime I just finished watching:
It's really not that much of a spoiler since you find out about this in like the third episode, but pretty much every character in that opening dies at some point in the series
I'm sure I've answered this a few times, but my answer remains unchanged. I'm particularly fond of this one:
