Destoryman from No More Heroes cos fighting him is more like fighting a supervillian since he shouting out his attack like "DESTORY BEAN!!!"

Another Joe from Viewtiful Joe, it had a awesome music and it felt somewhat a even fight since the boss is you so it felt like you were fighting yourself.

I know this'll sound weird, but the robot scorpion (the very first boss) in Final Fantasy VII is always a good one for me... It's just so memorable :3

Dunno if it counts as a "Boss", but in a sense, Godot from Ace Attorney: T&T. I loved the final case and his story in it...
