I've always liked Scorpion from Mortal Kombat (his spear attack and phantom punch are totally bitchin') as well as Sub-Zero.
And I remember playing as Jago from Killer Instinct a lot.
I really enjoy playing Mitsurugi from Soul Caliber. He has been a great character in every version. In the fourth game, though, some of the characters who emphasize speed over brute strength begin to come into their own, and Seung Mina and Yung Seung begin to be really fun to play.
Unfortunately, that is only due to special matches and the character creator. in a normal match, Mitsurugi is my only choice all the way.
In Tekken, I am a particular fan of Nij (isn't he called Raven? Stupid google search) the ninja, though this is partially because I haven't had as much time with Tekken as I have had with Soul Caliber, and I don't know the characters as well.
And though I'm not a real fan of Mortal Kombat, I do slightly enjoy playing Mortal Kombat vs. DC, and using Batman to beat the living daylights out of Superman.
And Ike in SSBB, though only because I played Fire Emblem and knew the character.
I don't recommend Fire Emblem, by the way. Just... don't play that game.

a vampire..or was it a demon, who holds 666 demons within his body, can use them at any time, and cannot die unless all of them are killed, seems pretty nifty to me

Cable is hard for me to use and i HATE HIM.

Captain Commando and War Machine was my main team in the First Marvel VS Capcom.
Virtual On: Fei Yen. Because I like playing speedsters, I like blasting people with hearts, and I typically form attachments to female fighting game characters...even absurd ones, like giant robots. Alternate: None, because I haven't actually used anyone else.

Vampire. He's one of the 27 Dead Apostle Ancestors (there'd be 28, but certain DAAs are idiots, so Tsukihime's main villain is unnumbered). That's not really a spoiler, don't worry.
Chun-li. Street Fighter 2 was my first fighting game, and she was the only girl character, which was a big deal to me back then. The only other playable girl I've ever seen in a game up until then was Barbie, and the game involved four levels of maneuvering her around obstacles as she took a walk. >>; But here was Chun-li, fighting with the guys, and she was cute and badass at the same time. She's been my favorite ever since.

Street Fighter Vs X-Men was also cool.
Actually, the original X-Men fighting game was pretty cool too.
The only one I don't like is the new one MvC2 for the PS3 and 360. Stupid dumbed down control scheme. Almost everything is fireball motion (d,df,f + P or K)and why they would remove the MK and MP buttons after all these years is beyond me.
You know, I could probably go on all day. Fighting games are one of my two favorite genres after all, and I very, very rarely play just one character. Oh well, let's see how this goes...

Arcana Heart: Fiona Mayfield. Slow but powerful striker (I don't play grapplers that well), and kinda cute besides. Alternate: Petra, for looking like she's from a Quentin Tarantino production of Swan Lake and wielding dual energy pistols.
Favored arcana: Tempestas (Wind) and Orichalkos (Metal).
Melty Blood: Kohaku. Because I like hitting things with brooms, and she's my favorite character from Tsukihime. Alternate: Hisui and Kohaku, twin maids unite!
Capcom vs. SNK: Hibiki. Because <url=http://www.youtube.com/watch?v=T2ghZxB3oLY&feature=related>No Fear Feint owns you. Alternate: Yun, because calling on his brother for a teamup super is farking sweet.
Smash Brothers: Link, Link, and (Dark) Link. Various reasons. Alternate: Pikachu (64), Pichu (Melee), and Olimar (Brawl).
Soul Calibur: Raphael. Range, power, and style...at least, in SC2 which I still play. Alternate: Amy.
Guilty Gear: Axl Low. Because I like fighting from the other side of the screen with a blatantly implausible weapon. Alternate: Eddie, for being a friggin' shadow creature.
Tekken: Armor King. Because Japanese pro wrestling moves are fun in arcade games, and he looks badass. Alternate: Xiaoyu, because I like using small Chinese girls to beat people up.
Fate/Unlimited Codes: Assassin. Stylish, huge melee range, great spacing techniques, really cool super, and one of my favorite characters from Fate/Stay Night. Alternate: Archer, because he's fucking Archer (and I absolutely love pulling off Unlimited Blade Works in a fight).
Naruto: Clash of Ninja: Shino. Because killing people with insects is just fun. Alternate: Hinata, for being my favorite Naruto character who I can actually use well (sorry, Gaara...).
I'm probably forgetting a few. Name a fighting game. Other than Mortal Kombat (don't like it) and Killer Instinct (never played it).

Shino is a lot of fun, he feels like a faster Garra to me.
And besides, who wouldn't like to take out their opponent with Cyclone of bugs?
I like Garra in Con3, they made him a tad faster.
Hinata is fun as well, i like that her moveset lets you get around an Opponents Guard.
If you ever Get Naruto Clash of Nin 3 for the wii you better give your FC.
Axl is a lot of fun but too slow for my Tastes.
Aside from Johnny i like Ky and Baiken.
Baiken is a beast, and she is based of Kenshin.(Awesomeness)
