After my friends gave me some cookbooks for my birthday, I got to thinking about the things I like to make for myself in the kitchen.

So the question is, what dishes do you like to make for yourself? No pre-packaged stuff that you just assemble, but the stuff you make from scratch.

For myself, I really liked an old Scottish dish I made recently: barley and mushroom casserole. It really is just barley, yellow onions, mushrooms, soup stock and a couple of spices. Very tasty.

One of my favorites from a loooooooong time ago is garlic/lemon baked chicken. I enjoy it enough that I will actually type in the recipe.

Take one whole baking chicken. Clean and pat dry.
Take one lemon and hideously stab it with a fork.
4+ cloves of garlic, coarsely chopped.
Put the lemon and garlic in the chicken with one teaspoon of salt. Bake at 350 F for 15 minutes per pound.

The salt pulls the juices out of the lemon and garlic and lets it cook into the meat in the oven. The flavored chicken is a great main for any meal combination.

I'm a big fan of Japanese curry, which is why I learned how to make it ages ago. I made a few changes though, I use sweet potato instead of carrot (because sweet potato is superior). I also add some Cayenne pepper, since the Japanese can't handle their spice, and the thought of a not-spicy curry horrifies me.

I quite often make a dish with Couscous (flavoured with finely chopped mushrooms, butter, lemon & enough chili to give it some heat), Halloumi w/ garlic mayonnaise on the side, and usually a salad to go with.


Also used to make stir fries a lot, back when I shared a house with another vegetarian.

I currently have been making a lot of things with a homemade marinade... hoisen (or however you spell it), teriyaki, soy sauce, mirrin, chipolata Tabasco, and a couple other things. Goes very well on pork, chicken, and shrimp/fish. Usually served with rice/potatoes and a veggie. Rice or potato depends on pork, chicken, or sea food.

Also, I am from the middle of Nebraska so... steak on the grill, w/ corn on the cob, watermelon, and Budweiser. It screams summer in the mid west.

Not food, but the process of making tea is pretty cool. First thing that popped up for me.

Caesar salad.

The dressing is the key. Mixing together coddled egg, diced anchovies, olive oil, shredded parmesan, garlic and waiting several hours for the dressing to take in the garlic flavor makes it s chore to prepare, especially getting the proportions right. Once it's done though, it's the first thing to disappear off the table. Add in some freshly baked cheese croutons, add some paermesan cheese and it's easily the only thing you'll want to eat.

I used to make awesome canoli...now I can have neither cheese nor tomato so that's right out...

I used to love to take a fish fillet and put it on a bed of a mix of brown & white rice with some seasonings & slow bake them...

With my increased dietary restrictions (food sensitivities) and time & budget constraints I don't cook nearly as often as I'd like to, but some things I can still occasionally do are,

Teriyaki marinated roast chicken wings....
Vegetable soup from scratch....
Fried mushrooms...
Meatballs from scratch (always a hit at parties/potlucks)...

I make a sweet chili. Tons of peppers (serrano, bell, cayenne) and onion, with the sweetness balanced by baking chocolate and Guinness Heavy Stout (or Yeungling Porter), along with plenty of beef and some beef stock to bring the meat back to focus. I'm not big on beans, but mix some in as well. Of course the base is crushed tomatoes.

Unfortunately that is the only thing I excel at making. But on a cool fall or cold winter's night there's nothing else I'd rather have.

Lots of stuff really, but in the rare case there is root beer and vanilla ice cream in the house, it's root beer float time! So simple, yet so delicious!

A nacho recipe(which I changed slightly) I make from time to time is the most awesome thing ever.
Nachos in the bottom of a large oven...form(?), ground meat and tons of cheese on top of that. Throw it into the oven for five minutes, then add red sauce, salad and some left over red union and pepper. Take a portion, put some creme fraiche on and mix that shit.
My stomach makes whimpering noises right now.

I can make a mean chicken tikka masala. A healthy dose of chopped chicken in a chopped tomato and tikka masala paste. Lovely.

I also make a rather nice cheesy bake thing. Slice potatoes up into as slices as thin as you can without having them collapse after boiling, and boil them, steaming brocolli/cauliflower above them. Place them around the edges of your dish, edging inwards until you run out of potato, then fill the rest with broccoli and cauliflower.
During the cooking above, make a cheese sauce using bechamel as the base. Generously pour it ontop of the potato-broccoli-cauliflower dish. Cook in the oven at 180 degrees C for about 20 minutes. Enjoy.

One of my specialties is pork tenderloin. I don't often get an excuse to make an extravagant meal like this, but when I do, I marinate the whole tenderloin for a few hours in balsamic vinegar, a bottle of dark beer (usually some form of lager), rosemary, garlic, thyme, and other seasonings that vary based on what else is being served. It then goes on the grill long enough to sear each side before being wrapped in bacon and tin foil to slowly roast for about two hours.

Partly because of this dish, I keep being told I need to drop the engineering gig and open a restaurant. Flattering, but not really appealing.

1. Wrap half a pound of halved baby potatoes in foil with four sliced garlic cloves.

2. Roast potatoes until well cooked.

3. While they roast, heat up two parts olive oil to one part honey, one part deli mustard and one part vinegar.

4. Put two big fists of spinach in bowl. Dump roasted potatoes and dressing on it, toss. Serve with chicken.

Waaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaant.

For dessert, combine a pack of tofu with a bit of sugar, vanilla and a good amount of melted chocolate, blend until smooth and refrigerate for a couple hours.

Chef Michael Smith is awesome.

........Sure it's not much but really, bacon sammiches are hard to be improved upon.

I like to make a grilled cheese out of como bread and mozzarella. It is incredibly tasty and fairly simple to make. Honestly, though, I don't make things that complicated myself anyways. My cooking is pretty basic sprinkle-on-seasoning-and-stick-in-the-oven stuff for the most part.
