It depends on my mood. My top favorites are steak, chicken, and venison. Mmmmm... I don't eat enough venison.

pigeon breast, very rare on a bed of lentials with a red wine jus.
Or scallops with black pudding and very salty gammon with a rocket salad.

When I did my apprenticeship we had a dish that was seared scallops and black pudding on a seared potato cake with harissa and chive oil. I've been adicted to pigs blood ever since!

Also rocket salad. I like to make a rocket, pear and blue cheese salad with walnuts and a raspberry balsamic dressing.

Quite fond of lamb stew. But only if the lamb is properly braised x.x

First sizzle it a quite at mid high temperatures till slightly browned, then cooked at a simmer in a stew.

Otherwise I prefer beef ... as it's a little more brainless in how to prepare it. Though beef stew requires the same level of delicate treatment unless you want it tasting like shite x.x

Venison is quite nice braised and prepared with a thickened stock sauce o.o

I enjoy ham because it taste nice (plus gammon is awesome). However I prefer chicken because of the high protein.

Duck. I was a vegetarian for nearly 5 years and to celebrate the end of it i ate a whole duck....so delicious.......
