What if you just cut off its torso?
I don't think torsos grow back.
If you cut off the torso, you're basically cutting off the heads. Thus defeating the purpose of trying to cut out the torso.

Anubis, Cerberus and Minotaur.
I think you mean Anubites, Anubis is the God over there.
<---

and I pick Anubites, Sphinxes, and Hydras.
Because they're fun

The Hydra. You can only kill her by cutting off her gigantic head, and whenever you cut off a head 2 more grow back. Seriously, you're fucked if you ever come across a Hydra.

Isn't her skin impenetrable, her only weakness being her head being cut off?

No no, convince the hydra that it was it's torso that was cut off, not its head, and maybe it will give up.

Impenetrable skin. I'm pretty sure that means radiation too.

Hmm, confusing. I doubt you can convince an angry hydra to give up, it will fight for its life.

As for my favourite? Well, it's kinda hard to pick just one, being the mythology geek I am. I'd probably have to go with Baba Yaga, though. Ever heard of a witch who flies around on a giant mortar and lives in a house with chicken legs? Didn't think so.

I would have to say Jörmungandr. I mean, come on, he's large enough to encircle the enitre world AND he killed Thor during Ragnarok!
Well, well, I was going through the thread to see if anybody had the thing I had in mind and behold, here it is. The Midgård or World Snake, as it is called in Norse mythology, is quite an interesting being. I originally was thinking about Ouroboros, whitch is a symbol of a snake eating its own tail and symbolizing various things, but this is more specific.

Also, Thor does kill the snake during Ragnarok, but he dies himself because of poison...Ok, I think I should stop here before I ran out of info on this matter. I know only some details. :D

I'd have to go with the phoenix, and the the shinigami.

The phoenix because it's pretty, it flies, and it's virtually immortal to boot. Did I mention it's pretty?

The shinigami because they're pretty interesting and cool for the Asian counterpart to the Grim Reaper. And they're immortal, except when they're not.
