i would say either fallout 3, mass effect, or any of the final fantasies for ps1. I've put hundreds of hours in these games and i still fire them up every once in awhile when im bored of CSS

Any Total War game, Mount&Blade, Morrowind, Oblivion, Tropico, Gran Turismo 3 and 4...100% of my games are either singleplayer only or "challenge match multiplayer".
