I really, really, really love the soundtracks of Okami, Shadow of the Colossus, and Braid.
Okami's because it's just plain beautiful; especially fitting for its splendorous, varied environments.
SOTC; because... well, come on. Just listen to it or play it, or something.
Braid's few songs are nice and relaxing.

The Halo Soundtrack, it's just really deep and memorable. Appropriatley epic and orchestral and it set the right tone for the franchise. Also mentioning ODST's soundtrack for being such a radical change but for still sounding great.
Also here are Bioshock for the nice 30's hits and Mass Effect again for being cool and suiting to the atmosphere. It is remiss of me not to mention Gears of War 2, that was epic.
Fable had some good ones too and of course so did Otogi: Myth of Demons.

By far the Silent Hill Series, especially Silent Hill 2
Metal Gear always had good music, as well as the first film composer to work on a video game, loved the music on Snake Eater.
Shadow of the Colossus was the first one I fell in love with.
And also the Killer 7 soundtrack
