The Silent Scope arcade rifle with the zoomed display inside the scope on the rifle. I would so love something like that on an elliptical trainer, to do biathlon style workouts.
Rocket Launcher from Halo 2 (with lock on), jus cos its fun wen ur mate thinks hes the dogs bollocks, flying around in a Banshee, and u stick a rocket up his arse!
Telekinesis in Bioshock, just for the sheer fact you can pick up splicers and throw them at others.
Off the top of my head, these are the weapons I'd take in a heartbeat:
BFG 9000 (DOOM) - It's a classic that kicks a lot of ass
RYNO (Ratchet & Clank) - Targeting 6 enemies at once is really handy
Gravity Hammer (Halo 3) - When I see Covenant body parts flying, it makes me feel like Gallagher
Rock-It Launcher (Fallout 3) - How else can you kill someone with a teddy bear?
Chinese Fuel/Air RPG (Mercenaries 2) - I haven't actually seen this weapon yet, but I hear it's incredibly devastating
The weapons from Blood were fantastic. The sheer excitement I felt the first time I was running around with a Tommy gun in each hand was amazing. And using a aerosol and Zippo lighter as a flamethrower? genious

oh and the hidden blade from Assassin's Creed never got old, although the rest of the game certainly did.
I can't decide! There is so many weapons to choose from! But I think the favorit is the the knife in CoD 4, how many times Havn't I slit my friends thoats with that whne playing LAN?
1: CoD4 Knife
2: Mauser rifle in any of the WW2 games, one hit, one kill.
3: Hidden blade in Assassins creed
4: Flak gun in UT3 - UNSTOPABLE!!!
5: Probaly some sniper in CoD4 too...
Flak Cannon - UT 2K4 (Two words. Flak Monkey)
Flamewall - Rise of the Triad (Shoots a missile into the ground that sends out a wall of flames to burn all the enemies in its path)
Excalabat - Rise of the Triad (A magical baseball bat. Need I say more?)
Split Missile - Rise of the Triad (While the fire button is held, its a single dumbfire missle. When you let go of the fire button, it splits into two heat seeking missiles)
Drunk Missile - Rise of the Triad (Shoots five missiles that fly erratically.)
The Gauntlet - Quake III: Arena (Quad damage + Gauntlet = Fun times)
Railgun - Red Faction (Being able to see and shoot people through walls? Awesome)
C4 - Red Faction (No! Please! Don't do i-*BOOM*)
Cyclone - Perfect Dark (Mag dumping is awesome)
LAW - Killing Floor (About the only thing that can bring down a Fleshpound)
Oh, the air fuel gernades from resistance. A lot of guns from resitance The wodnerful all purpose carbine, the tag an enemy and then shoot them from around the corner Bullseye, the auger which shot through stuff, the sniper rifle that slowed down time, the rockets you could redirect midflight... Ah, such a wonderful collection of violent implements.
I've always liked Barrett's machine gun for a hand (from FFVII). Seriously, if you had an amputated hand, wouldn't you get a machine gun attached? Or maybe a spork, since it's a spoon and a fork combined.
Also, the Shishkebab from Fallout 3 is pretty awesome, it combines cutting and burning, all you really need.
Any sniper rifle on any FPS - or 3rd person shooter come to think of it. (gotta love the sniping).
Tactical 12 Guage & double KSMg with the rocket attatchment (TimeSplitters series).
Holy Hand Grenade (Worms).
Desert Eagle (GTA San Andreas).
Combat Shotgun and the Pump-Action Shotgun (Max Payne).
Garrand M1 and Springfield rifle (from any WW2 game).
I also favour pistols on shoot 'em ups, for the accuracy.
The best weapon in DAH! was always psychic powers. People died so easily with a couple of hits against a wall. In DAH!2 they had skeletons of steel, it seemed.
