I would have said the Metroid Prime trilogy if it hadn't been said several times already. Also glad to see the DKC trilogy mentioned. Man those were good!
If you consider Legend of Mana to be a 'renewal' of that series (vastly different in feel and it turned me off- none of the ones after it have been very good) then the first three Secret of Mana/Seiken Densetsu games compose one of my favourite trios. I would love to see a remake of 2 or 3, or better yet a new one done in the same style.
In a similar vein I might have said the 'Time & Space' trilogy (Soulblazer, Illusion of Gaia, Terranigma all on the SNES) but I haven't played Terranigma to judge; some people say it's as good as the first two, others find it way too grindy and repetitive.
