And unfortunately I can't find a video and I don't have a hard copy, but on another forum I used to frequent, a small group of the members would collab and make albums, usually based on a single genre, or topic.
One of the member's did a cover of Fade to Black, and it was amazing. Too bad The download link to the album is broken, and the forum is more or less dead.
EDIT: I tend to like nearly ANY cover that meets two criteria.
1: The artist puts their own "spin" on it, rather than simply emulate, or try to sound 100% like the original.
2: They don't butcher the song is doing so.
I dig strange covers, the Alien Ant Farm one has to be one of my favorites. Two good ones in recent memory are Anya Marina's "Whatever You Like" and Fall Out Boy's "Beat It".
Wow... still no one mentioned the greatest cover of all time. Chubby Checker's version of The Twist. 99% of the people don't even know it was a cover of someone else's work.
I also like Corey Hart's version Can't Help Falling in Love and I absolutely find Nirvana's cover of Where Did You Sleep Last Night chilling.
Well, Hendrix's version of All Along the Watchtower for one
Then Hallelujah by Jeff Buckley
What's So Funny Bout Peace Love and Understanding by Elvis Costello
Johnny Was by The Stiff Little Fingers (originally Bob Marley)
Blinded by the Light by Manfred Mann's Earth Band
Keep on Running by The Spencer Davis Group
Mr Tambourine Man by the Birds
Hounds of Love by The Futureheads
Higher Ground by The Red Hot Chili Peppers
Blasphemy incoming, I've never been the biggest fan of Bathory, but this cover is great. The riffs just continually lay down sections of track for John Kevills vocals to go tearing right off of.
Cheers for posting that. As you could probably tell from my username, I'm a huge fan of Bathory, so this was interesting to listen to. While I prefer the original, these dudes did a pretty cool job of it.
And this is probably the best cover song I've ever heard.
Every Jeff Buckley cover ends up being something stellar. He also covers I shall be released by Bob Dylan and it's brilliant to. But this one just affects me the most.
There are a lot of great covers. Too many for me to just rattle them off. Nirvana covered several of the Vasolines songs (Molly's Lips, Jesus Don't want me for a Sunbeam) and really steal them from the originals. The Beatles did a lot of good covers as well. Hell, there early careers were halfway based on covering other artists. Same with Creedence Clearwater Revival who do an excellent cover of Heard it Through the Grapevine. Still doesn't top the original cause ain't nobody topping Marvin Gaye.

Wow that was quiet, the ten inch single version is the loudest vinyl recording i own, so I turned my headphones down, only to turn them up to full (I now feel stupid that I went to get a tape measure to know how big it is ).
Edit: I now feel stupider now that I realise it was my mixer sounds all being low, but still the record is still louder.
Hopefully no repeats as I went a bit googly eyed scrolling down. A few randoms that come to mind...
This I came across thanks to a newgrounds video, of all things. In fact, I only knew Journey from Don't Stop (*spit*) Believin', and with the exploration this prompted, I now know that was something of an anomaly.
(If you think you recognise it, it's because the original plays over the arcade scene in Tron Legacy. They each have their own plus and minus points, but I prefer the cover)

...crap, now I can't remember what was going to be #2 and #4. Let's skip on to what would originally have been #3 and hope they come back.

Simple, but... skills... and evokes the original multi-part piece (which itself is damn near perfect, if short) astonishingly well. Plus it's a game theme, so, yknow, appropriate.
Somehow I remember it sounding a bit more epic than it did when replaying it just now. Maybe Youtube have re-encoded a load of old stuff and mullered it slightly?
...and an advert at the start of that may have just given me a #5

It's just so silly.
...and it's also reminded me of three more that can be #6, #7 and #8, and I'll just come back to 2 and 4 at some later date. OK, one's a parody and the other's a remix, but whatever.

Beats the original by a country mile...

Some of you sceners may get this. OK, it's not really much different to the original, but it IS rejigged to work on much reduced hardware and has some interesting instrument sounds...

I don't even expect you to understand, just roll with it.
...balls, my head is still blank for the others. They were good ones, I swear.
I'm getting flashes of them (I'm pretty certain at least one was metal, but redone in a different style... which now makes me think of a #8 - The Cardigans' take on Sabbath Bloody Sabbath...)
Captcha: French Phrases. Yep.
Well, Rise Against's cover of Blind is pretty awesome:
While not exactly a cover, it is at least a reimagining of a song and vidya related. Bioshock Infinite's eery as fuck version of Chopin's Nocturne No. 2 Op. 9. While I prefer the original, it fit the scene really well:
