And unfortunately I can't find a video and I don't have a hard copy, but on another forum I used to frequent, a small group of the members would collab and make albums, usually based on a single genre, or topic.
One of the member's did a cover of Fade to Black, and it was amazing. Too bad The download link to the album is broken, and the forum is more or less dead.
EDIT: I tend to like nearly ANY cover that meets two criteria.
1: The artist puts their own "spin" on it, rather than simply emulate, or try to sound 100% like the original.
2: They don't butcher the song is doing so.
I dig strange covers, the Alien Ant Farm one has to be one of my favorites. Two good ones in recent memory are Anya Marina's "Whatever You Like" and Fall Out Boy's "Beat It".
Wow... still no one mentioned the greatest cover of all time. Chubby Checker's version of The Twist. 99% of the people don't even know it was a cover of someone else's work.
I also like Corey Hart's version Can't Help Falling in Love and I absolutely find Nirvana's cover of Where Did You Sleep Last Night chilling.

Blasphemy incoming, I've never been the biggest fan of Bathory, but this cover is great. The riffs just continually lay down sections of track for John Kevills vocals to go tearing right off of.

Every Jeff Buckley cover ends up being something stellar. He also covers I shall be released by Bob Dylan and it's brilliant to. But this one just affects me the most.
There are a lot of great covers. Too many for me to just rattle them off. Nirvana covered several of the Vasolines songs (Molly's Lips, Jesus Don't want me for a Sunbeam) and really steal them from the originals. The Beatles did a lot of good covers as well. Hell, there early careers were halfway based on covering other artists. Same with Creedence Clearwater Revival who do an excellent cover of Heard it Through the Grapevine. Still doesn't top the original cause ain't nobody topping Marvin Gaye.

Wow that was quiet, the ten inch single version is the loudest vinyl recording i own, so I turned my headphones down, only to turn them up to full (I now feel stupid that I went to get a tape measure to know how big it is ).
Edit: I now feel stupider now that I realise it was my mixer sounds all being low, but still the record is still louder.
