F-Zero GX. No game will ever have a better soundtrack or challenge me more than that game. Nothing.
Might want to try DiRT3 then, it features cars going 200km/h (125MPH) over a forest road, at night, while it's snowing. Certainly rivalled F-Zero GX in terms of just how focussed you need to be if you don't want to accidently catapult yourself off into the woods somewhere.

Jak X.

Very strong combat racing game. I got interested in racing cars for a moment while I played this game. It passed, but it was a good game.

Mario Kart 64 was probably the one I played the most and always had fun with with friends.

But honorable mention goes out to Lego Racers, Chocobo Racers, Crash Team Racing...

What happened to racing games? I miss when racing games had cool cars and fun cartoony characters. I don't wanna pay for a racing game where I drive a normal car.

Outside of the Mario Kart games do they make games like that anymore?

It's got to be Forza 3. I had been hoping Gran Turismo 5 might take its place as my favourite, but it just didn't seem to live up to expectations.

Honourable mention goes to Fatal Racing - had a lot of fun with that back in the day.

Ontopic, Trackmania hands down. I can't think what else to add.
Ooh, I almost forgot about Trackmania. Was never a huge fan of the actual racing, but spent lots of time making the most evil tracks I could :)

Mario Kart: Double Dash. There is something undeniably enjoyable about being able to punch Baby Mario in the face.
That awkward moment when you're waiting for the last person to finish on Mario Kart..

That much more awkward moment when the game disqualifies them for taking too long..

I've never really been all that keen on racing games but the most recent Gran Turismo game on PS3 is pretty nifty.

Gran Turismo 3 or 4 (I've not had the opportunity to play 5). I was better at 3, for one thing the rally races were more forgiving, but 4 was about the same level of quality just better graphically.

Speed Freaks (AKA Speed Punks), from Norwegian developer FunCom. Basically a Mario Kart - ripoff for the PS1, but I love it. The tracks are beautifully detailed and richly varied, the characters are likeable and the racing feels nailbitingly frantic and fast-paced. It's a simple concept, pulled off well.

Mod Nation Racers (PS3) delivers a very similar experience, though on a much larger scale.

Gotta say Blur. I get bored with Racing sims and Mario Kart is just cheap to me but Blur had a great balance of beautiful cars, neat tracks and weapons that can be used strategically to gain an advantage but not necessarily win.

Also ATV Off-road Fury was one smooth game.

Not a huge racing fan, but wipeout was pretty good, and PGR3 keep me busy for a while as well

Burnout Revenge.

I love Burnout for the simple fact that going faster than the other cars is a secondary objective. I find 'straight' racing games fairly boring usually.

1. Dirt 2*
2. Racedriver: GRID
3. Gran Turismo 5
4. F1 2010
5. Destruction Derby on N64 (capture the flag with a friend was some of the most fun I've had gaming)

*Don't have Dirt 3 yet... but I will.

Mario Kart.

Specifically, Mario Kart Wii.

I see a lot of hate for this game and a lot of people say it's the one that killed the franchise for them, but I cannot for the life of me understand any of it.
Yea, bikes are kinda OP, but there are ways of discluding them from races, there are 32 unique and memorable tracks, 16 of which are newly detailed and rendered classics, the online functionality is by far the best I've seen on the Wii and better than most 360 games imo, and most importantly, THEY GOT RID OF SNAKING!
