ADOM: One of the very best. There is absolutely no way you can not like ADOM. Play it. Now. It was released in 1994 and is still having new stuff added, so it certainly won't get stale either.

Binding of Isaac: Gloriously morbid and buckets of fun. Powerup system makes every playthrough unique, although the lack of any sort of save feature whatsoever is a *****.

Dungeon Crawl: Stone Soup: Loads of variety in this one, and lots of wonderfully imaginative ways to circumvent problems. Didn't actually play a whole lot of this one, but what I saw, I really liked.

FTL: One of the most engaging rogue-lites I've ever played, and the most unique. Unfortunately, there just isn't a whole lot there: a dozen or so playthroughs and you'll be getting a strange sense of déja-vu. Still a fantastic game for it's length, and well worth your money.

Anyways... My list, which may omit some worthy titles, but I'm only putting up what I've played:

- The Goldie Oldies -
Rogue ... The mainframe classic. Still good. Check it if you're a student of design. Been ported to everything.
Nethack ... The blatent 'rogue-clone' than improved the formula. See above.
Moria ... Another ASCII DOS rogue clone that made it on here because I liked it. Design inspired Diablo 1 a bit.
ZZT ... ASCII again, though a full game development platform with internal scripting language, to boot. By Tim Sweeney, the founder of EPIC games and OG Unreal Engine dev.
Megazeux ... The ZZT clone that improved the formula of the original. Much more powerful internal scripting language. RPGs, Arcade Shooters, Adventure Games and Roguelikes galore available for it.
Castle of the Winds ... Windows 3.1! .ico character graphics! 16 colors! It makes me oddly nostalgic, but for the love of god don't play it.
Dope Wars ... Windows 95 drug dealing! Start in debt to an angry shark and see how much you can make in 60 days. Now open source and still available, as are most of these in this list.

FTL: Faster Than Light ... If you haven't played it, you're missing out. 2014 free DLC expansion coming to PC users along with the same extended addition also debuting for sale on tablets. (and possibly PS4?)
Binding of Issac ... Like the others have said, it's great, morbid Zelda dungeon by way of flash art and creepy christian fundamentalist crawlspace escape stories.
The Consuming Shadow ... Yahtzee's new game. It's still in beta and suffering from a few clunky UI issues and bugs, but it's a really solid fusion of Lovecraftian horror in an FTL style 'race against impending menace'. His humor is more evident in the 'fuck you' aspects of the game design than the written story. It's free and on his blog.
Eldritch ... Lovecraft Minecraft? Not exactly, but that's true to the extent of it's aesthetic and plot as procedural voxel-cube FPS dungeon crawler full of mythos creatures.
Teleglitch: Die More Edition ... This is a weird one, but I really liked it and feel it deserves more exposure. It deliberately looks like ass and is more of a tense survival horror than the gauntlet-arcade-shooter trailers make it look, but it's very compelling and the combat is very satisfying. Here is a video:

I cannot stress enough how awesome Pixel Dungeon is!
I've put hundreds of hours into it and finally beat it after 450 games with a level 22 Assassin. It's brutally difficult and completely unfair at times, but it's rewarding and well worth your time. It's got excellent pixel art and animations for every mob and player character. The interface is smooth and very easy to use, New content is constantly being added, like the NPCs who give you quests and reward you with wonderful loot. Pixel Dungeon is easily my Game of the Year.

Nethack. Dear god, I've ascended eleven different classes and I'm still finding out new things every time I play the game. Considering the presentation, it's one of the deepest gaming experiences you could wish to have, and stands up alongside Sensible Soccer as a triumph of gameplay taking precedence over graphics. You can play locally, but I like online servers for this one (nethack.alt.org is still the best); finding everyone else's corpses and looting them will always be hilarious.

And if you must have graphics, there's always Diablo II, which captures the roguelike spirit pretty well.

I've had great times with Doom The Roguelike too, although recent updates have made the Angel Of Berserk challenge a total *****.
