ADOM: One of the very best. There is absolutely no way you can not like ADOM. Play it. Now. It was released in 1994 and is still having new stuff added, so it certainly won't get stale either.
Binding of Isaac: Gloriously morbid and buckets of fun. Powerup system makes every playthrough unique, although the lack of any sort of save feature whatsoever is a *****.
Dungeon Crawl: Stone Soup: Loads of variety in this one, and lots of wonderfully imaginative ways to circumvent problems. Didn't actually play a whole lot of this one, but what I saw, I really liked.
FTL: One of the most engaging rogue-lites I've ever played, and the most unique. Unfortunately, there just isn't a whole lot there: a dozen or so playthroughs and you'll be getting a strange sense of déja-vu. Still a fantastic game for it's length, and well worth your money.
