Maybe its just becuase I never did a quest with any (or just can't remember). Or maybe they don't have female counterparts much like Asari (though its hard to call them female technicaly since they don't have a male counterpart)

Female Krogan are mentioned. They have separate clans. Maybe we'll see one in ME3.
Volus I doubt you could tell either way. Those encounter suits are pretty chunky. And their voice modulators all sound the same.
Elcor are similar to Elephants and other such large herd animals. For elephants, a Female is head of the herd and single mature males are often roaming by themselves. The Elcor Ambassidor also explains that Elcor are claustraphobic and don't like long distance space travel. It could be possible that Female Elcor only travel between colonies and its the males that do all the roaming.
I think people have already mentioned that Batarians are supposed to be similar in stature to humans - except the grotesque spider faces - Although in some of the missions in ME2 featuring batarian terrorists there were some that seemed to me different - smaller in frame and such - alas I couldn't get a closer look on account of them shooting at me. The Blue suns mercenaries have lots of batarians and many wear face visors. Could be possible that all those evil rocket babes were female batarian?
As for the other races you mention, well maybe we do see only their physiology is so different humans wouldn't know. Turians are supposed to be reptillian/avian and salarians insectoid. Neither of these species types - at least Earth-wise - have obvious mammalian female traits (Breasts and such).
This is of course all supposition.
