Actually, the opposite of what's posted here: I hated a boss for being too easy.

One of my favorite video games ever, FFX, the final boss. (I think it was like YuYevon or something weird like that?)You literally COULD NOT LOSE, as they kept auto-life casted on you throughout the pointless battle. I'm big on epic boss battles, and that was pretty anti-climactic.
Reminds me of my least favourite boss - Rodrigo Borgia from Assassin's Creed 2. It's a fist-fight with a fat guy! The hardest part of that battle was getting to him and even that was easy. Even the cutscene fight between the Staff and the Apple was more interesting (The only redemption for it was what happened in the Vault, now THAT is climactic).

Side note: I found some of the assassination missions in the Bonfire of the Vanities DLC to be bullshit. I could kill almost all of the archers then get spotted by a guy I had no idea was there, had absolutely no way to see me or spotted me as I was walking up behind them for no particular reason (as I knew all of their patrol routes and which guards were just sitting and watching after attempting it 20-odd times) and have to restart the entire mission.
Yeah. I love Assassin's Creed & 2, but they get old, because there's no point in sneaking unless they just decide that you shouldn't get caught. It takes away from the stealth and assassin-like gameplay when I can LITERALLY beat 40 guys at once in a sword fight.

I got bored with stealth and just went notorious and took on every guard I saw at one point, just to get some sort of challenge. A fight like that would've made a good boss battle instead of going down the walls of the Vatican with tons of hiding spots and it basically screams stealth at you (on which level I ended up doing again charging through and fighting everyone). Also; sword fight? I use a hammer!

OT: HARDest boss I ever fought? Various timed bossfights - namely the final one from Prototype on Hard - ,Sephiroth from KH2 (yes I know it's kind of childish) ,the Clockworks from an MMORPG called FlyFF that I doubt anyone's ever heard of and the Battleship and Walker from Crysis on the higher difficulties.

Elizabeth Green in giant-blob-form, in Prototype. Such a tedious and irritating boss fight.

I found her quite easy, tedious? A little bit, the helicopter tends to make short work of the tentacles or just Air Groundspike Devastator her, then use the single-target Devastator (forget the name) on her blob. It does tend to take a while especially because she keeps destroying the vehicles (those green things are annoying as hell).

uber tristram in diablo 2
you have to be ridiculously strong and have the best gear just to survive any decent amount of time. I only ever managed to kill diablo once, and mephy always just seemed to be instant death

Swamp boss in Painkiller: Black Edition comes to mind as of recent because it all comes down to shooting bubbles that may or may not blow up and take like 7% ish his heath down while he has 2 attacks both of which take 25% off you

Chef Bot I did after a few tries. He was hard though, don't get me wrong.

But Sir Sweet -- it's that damn timer that I can't beat.
Yea, if it weren't for the 3 minute time limit I could hit him slow and focus more on dodging his attacks. Until then, I have a theory involving pausing the game a lot... I'll work on that later.
You mean like Blaster Master for the NES?
[sub]Pause the game while grenade is doing damage, and it will continue to damage the boss until it's defeated...[/sub]
Nah, though that'd be amazing. I mean pausing the game periodically to take a damned rest. I think if I can space it out long enough then I can definitly defeat that bastard.

I can't recall me absolutly hating a boss. There were some hard bosses I fought, but none brought me to utter rage. Or well, maybe they did once, but not anymore.

Oh wait, you also included past tense in that question. Bosses I used to not like:
-Spikey (Secret of Mana, SNES). When you're not leveling as much as you should, this guy wipes out your party over and over.
-Tarantula (Lufia II, SNES). Same problem as with Spikey, if you don't have enough levels and the proper equipment, this guy is freakishly hard to kill. Summoning minions, having a group-attack that can poison/paralyze teammates, healing spells for himself. Ugh.

I used to not like those two as much, but to go as far as hating them.. no. And aside from that I can't recall antyting. And now that I know tactics, those two aren't a huge pain any longer either.

Sephiroth in both KH1&2 on hard mode, I hate how the b*tch 1-hits (depending on your stats tho) me if I'm not right on timing all the time.

Sure it takes a lot of practice to beat him, and I don't have a patience like that when it comes to console games, at least, not usually.

ChefBot 9000. I hate that bastard! His power level is over- the developers of the game decided against that joke...

He randomly flies around the arena and attacks with horribly cheap attacks. If you get him in the red you need to kill him instantly or else you're screwed. If you're not already at the very edge of the map you're dead if he decides to slide since he's going all the way to the end. Bastard...
Have you battled Sir Sweet yet?
Chef Bot is easy compared to Sir Sweet... I still have yet to beat that mofo.
Sir Sweet is simply endurance. The first part is simple compared to the Chefbot battle. The only part about Sir Sweet that keeps me from beating him is the fact that I can't press Square that long and that fast during the second half of the battle.
I consider the timer to be a part of it.

is cheif bot an early boss as i was thinking of getting prinny
Boss just before the last boss if I remember correctly. So he's later in the game.
The game is tough, dood. Expect a challenge.
thanks for the warning but is it like disgaea where difficulty randmly gets near insane then back to expected difficulty eg chapter 11.4 in disgaea heros tomb is really difficult but 12.1 is relativly easy

The boss that prevented me from finishing FFX was some gigantic rock mecha thing that had like 64000 HP and my attacks did max 1000 against it, and it decimated my team with every attack. I never did beat him, never got to Zanarkand or saw the end of the game. I feel deeply unfulfilled as it's one of my favourite games.
I hate JRPG's for those uberbosses.

The one that I really remember is the sort of Millipede/crap kinda Sinspawn in Final Fantasy X. I dont quite remember what it was called...but the fight was on the coast where the Al Bhed have that funky cannon thing. OOH and its just after you get Ixion...i think o.o and you fight a weaker one straight after.

For real, ive never been so stressed at a boss before in my life, it was HORRIFIC. i ended up trading the game in because of him...twice:/. But third time lucky>:] yaaay. though there were a few other stressful bosses in that game, but they were really fun to beat. but this millipede thing...was just...no:/.

Cerberus from Titan Quest: Immortal Throne.

GNAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAA-

I'll spare you the bloody details, all you need to know is that if he regenerated health between the fifty odd times I faced him, I wouldn't be alive today.

AND THE LAST RESPAWN IS FIVE MINUTES AWAY.
