I rarely get to 100% in games. The last time I did that was with Mercenaries 2, and that was quite an accomplishment for me.

It's not quite that hard to 100% anything if you just sit there with a guide next to you. = / Just have to get through lots of load times and deal with how fast your character runs.

I feel like if I did the whole 100% deal with any game I would hate myself and hate the game. The closest I've ever come was Pokemon Yellow. I was missing 2 pokemon. I don't even remember which 2 they were.
I have a sneaking suspicion it was flareon and jolteon though.

The most recent game I finished to 100% completion was Escape from Butcher Bay. Some of the cigarette packs were irritating (I found out later that there was a guide, and promptly *facepalmed* myself) But then again, that woulden't be as rewarding.

the most memorable one for me was starfox 64 since I got 100% like 2 days after I got it but it was still fun as hell
second most memorable was dawn of war dark crusade, that took awhile
