Dishonoured kicked my ass around the block when I started, it took me a while to get used to the stealth (I've always been taught shadows = hidden, so kept relying on that and being found out) and powers, but now that I've got the knack of those I'm breezing through levels.

The first few hours I played of The Witcher 2 I thought it was pretty difficult even on the default setting. I stuck it out and by the end of the game it was actually leaning towards the easy side. I don't know if its merely balancing out as you improve your character, being more in tune with the mechanics, or a combination of both.

Resonance of Fate.

Once you finally understand the battle system, it's like riding a bike. Especially since Tri-Attacks and Hero Attacks are so overpowered.
Yeah I thought the same. I was having a great deal of frustration with that game at first. Then there was sort of a moment where everything clicked and it became a lot smoother and felt pretty rewarding.

If a game does NOT get easier once you figure out what you're doing, something in the design document is rotten...

Dark Souls. All you gotta know is what to do. Then the game is piss easy.
Is 'what to do' have some actual talent at video games? Cos that might be my problem in that game. :/
There are some things in Dark Souls that come easier to others. A friend and I were talking about Ornstein and Smough, and about how he can trash Smough up and down, but he can't handle Ornstein for his life. I'm the opposite, though. I can wipe the floor with Ornstein but as soon as Smough jumps into the mix I'm screwed. But really a lot of it is memorization.

Vanquish and Resident Evil 6 Professional Mode for much the same reason.

They actually have rather extensive mobility mechanics. Not relying on them can get you through the game, but mastering them will let you breeze past any challenge.
