Here's my favourites, despite their cons I'd still rate them a solid 10 what they achieved at the time of their release is irreplaceable for me although I accept that now they've dated and not always in a good way, personally I'd still play them now, over and above many new games which have tried to emulate their game mechanics.

Outcast -

Pros: Immersive and expansive world, characters, narrative, great score, fun combat.

Cons: No hardware acceleration for voxel graphics meaning if your CPU wasn't up to the task then the game was slow.

Thief -

Pros: Good storytelling, dark quiet levels where every sound is a clue as to what's around the corner which increases suspense and tension. Great main character and well thought out fantasy world.

Cons: Undead levels were meant to be shooter-esque and failed miserably.

System Shock 2 -

Pros: Scary, well-thought out continuously changing environment, characters and narrative with fleshed out side stories and a long play time.

Cons: Combat is tough and the fatigue on weapons is annoying after a while.

Deus Ex -

Pros: Diverse, wide-ranging levels, in-depth NPC interaction, involved and intriguing narrative, choices made in-game effect the rest of the game.

Cons: Combat was on the verge of broken once you ranked up and animations can look too robotic sometimes.

Half-Life -

Pros: Detailed immersive environment where situations hint at a larger story yet to be told allowing your imagination to run riot. Diverse and frenetic combat. Many levels, situations, overall quite a long game if you explore everything.

Cons: Lacked direction toward the end of the game.

No use defending FFVII while in escapist.

Can't really think of anything...Well I guess Assassin's Creed is a game series I'm always defending and praising it every moment I get.

Buy 'em!

EDIT: Oh wait I thought of another: Guild Wars!

I have a couple of titles, though most of them are old school:

Gun-Dec (A.K.A. VICE: Project Doom)
Rocket Knight Adventures
Gunstar Heroes
Panzer Front

Gothic I and II
Oh YES! Those games are awesome. Have you tried Risen? If you haven't you should, it's a bit more of a return to the old Gothics after the disappointment that was Gothic 3. Not entirely the same, but very much in the same vein.

and well... Sacred I and II.
Hahaha, nice one. I get it... Sacred is sacred. Or were you serious?
Im serious with Sacred 2. First one was ok but not that awesome.

I know exactly what you mean. Strangely, I hear people say that FFIX had worse graphics than FFVIII. I think this is because FF9 was more "cartoony" so some people think it was not as good or better than FF8 in the graphics department. Truth be told, all the PS1 era FF games had amazing graphics for the system's limitations.
That would make sense (that is people considering this, not their opinion), because they're less 'realistic' the graphics must be worse. And like you, I recognize the limitations the PS1 had, so I appreciate the graphics the FF series had considering.

Like you, I don't consider any modern games sacred. Not because they aren't as good or better than the games I grew up with, but because I'm a different person and have different views on games, now.
Between that, and the sheer amount of games that are rolled off the line these days, it's hard to find one that I truly connect to. It's that connection that makes a game feel sacred to me, not the amount of guns, blood or violence.
