None, all the games with the "nostalgia factor" are still good as they are.

Pretty much this. With the possible exception of the Quest for Glory (never got a chance to play that, but I'd love to) series and a few other old PC games that can no longer be run on newer PCs.

X-Wing and TIE Fighter. Those games are just begging for a remake. Maybe even a new release. The Star Wars starfighter games since then have been more arcadey.

Well think about it, L4D had a sequel pretty quickly and here comes portal 2 relatively soon and then look at TF2 started as a mod for HL 9 years later a 2nd came out.

Final Fantasy 7 has nothing on six. Most were too young to appreciate the earlier FF titles. I tried going back and playing FF7 and could not get past the graphics or the storyline, but FF6 I can play over and over and it never gets old. Kefka would also kick Sephiroth's ass

...you will never see this game ever redone because SquareEnix cannot get anything right.
