I think remakes are fine in many cases as some games would work well with new technology and could probably find a following with the new, bigger, pool of gamers.
I'd probably vote "Master Of Magic" for the #1 title I'd like to see remade with current tech. I understand it's inspired a lot of "spirtual successors" but I don't believe there was ever a direct sequel or remake of it.
Other than that I'd like to see a remake of the "Dark Savant" trilogy from Wizardry "Bane Of The Cosmic Forge", "Crusaders Of The Dark Savant", and "Wizardry 8". Epic series, great turn based engine, create your own party from dozens of options. Almost impossible to get to run on current systems. :/
What's more I think that series suffered from the amount of time between chapters (which to be fair, happened for a reason). By the time Wizardry 8 came around, I think many had lost faith. Still, that's probably one of the more epic game series ever made.
I also think that the "Ultima" games are itching for a remake, or perhaps even an entire reboot, though a remake would be better. Given the state Ascension was released in, I was never able to complete it, and from what I was able to piece together it didn't lead to all that satisfying a conclusion. What's more the end of the series got a bit disjointed with the whole Serpent Isle, Pagan, Ascension path... I mean it made a certain degree of sense I guess, but could have been tied together better.
