Far Cry 2 is a very fun game, but a save anywhere system for the console version and a better fast travel system would have made it excellent. As it stands, it's the only game I own for my 360 that I haven't finished.
The first game I thought of when I saw the thread title.

I trudged my way through to the end, and it wasn't at all worth it.

Cutting down the times on the enemy respawns would have made the game more fun too.

Mirrors Edge with just a few small tweaks, more levels and a better story could have been truly amazing because even with those flaws I find it very compelling to play I just wish there was a little more of what I liked

Bayonetta.
say what?

I hated the game really I did for a J-Rpg it was a witch with guns big whoop.
And yes I do like JRPGS the old fasioned ones but today they are just a let down.
I wasn't going to say anything, but...I'm baffled...how does Bayonetta has anything to do with JPRGs?
Okay let me take the rpg out of the element and call it an evil with organization made by japanese people.

I suppose that's a bit better. In the time I played it it had NO RPG elements at all. Haha

agree to disagree on that one. I listed my reasons why it wasn't so good here: http://www.escapistmagazine.com/forums/read/9.190561-Bayonetta-anyone#5946156

But alas, that's just me, well...mostly. Someone else mentioned the dodge thing also

Far Cry 2 up the hizzouse!

Yeah, I know at least two others before me have already mentioned it but oh well.

Yet again I must state my disdain for FEAR 2: Project Origin. They could've at least upped the AI so that the battles would've been somewhat entertaining like in the original FEAR. But noooooooo. They had to dumb it down and make it a lesser game than its predecessor. A fair bit of wasted potential there.
100% hands down agree on fear, I played the old one more than the new one evan today.
Yeah, I'm pretty much a fanboy for the original FEAR. Just so much fun you could have with that one, in fact I'd often get past certain fire-fights and then reload to a previous save point just so I could do it all over again differently. A lot of people don't realize just how good the AI really is in FEAR, so you can easily tell what one of the major reasons for me disliking Project Origin is. :p

To be honest, I'm getting the urge to re-install FEAR now and have another right old go at it.

Umm... I have to say the Wii. I know that it is a console, not a game, but when I think good Wii titles, I think Mario Galaxy. That's it. I know that I'm bound to get some hate mail for this, but if Nintendo had created more quality games, a la the Gamecube and the 64, then Nintendo might not have started to go the way of Sega. They could have also done something slightly more than the Wiiware channel thing. I couldn't make heads or tails of that thing. No patches, no demos, and that fun points system. *Shudder*
The trouble is, the old systems had much more actual Nintendo involvement. A lot of games for this generation are third-party, and so they desgin games without the Wii in mind, and just tack on waving the wii mote on. They don't use the hard ware properly, and no way around it, the Wii doesn't have enough inside it to not use everything it has. The actual Nintendo games, like Mario Galaxy, or Twilight Princess, or even third party games built with the wii in mind (I'm currently in love with Heatseeker) result in more fun then anything I've had on another system.

Left 4 Dead 2. If they had spent a bit longer making it instead of rushing it, it could have been great. As it stands now it's okay but nowhere near the original.

Doom 3. Ever since Doom 1, iD has pumped out milestone titles. Doom 3 hit the market and it fell so short of what it could have been. It looked amazing, it just sucked to play (aka, no ducktape on mars).

As for something a little more recent, Modern Warfare 2 (mainly on PC but console too). I gave MW2 the middle finger when they said no dedicated servers on PC. I knew it was going to be shit from day #1. After a few friends were like "OMG! BEST GAME EVER ON PC!" I sat back waiting to see how long it took for this to wear off. It took about 3 days till I heard "WTF? TOO MANY HACKERS!" and "WOW! I CAN'T FIND A GOOD LOBBY". After hearing this yet still wanting to play the game myself, I bought the MW2 Xbox 360 (Its a good deal for those who don't have one). The single player campaign went by too fast (took about 4 hours). The Spec Ops had a ton going for it if they kept to the original concept. The multiplayer was meh. Its basically MW1 with less martydom & way more noobtubes.

Zone of the Enders 2.
The level where the player flew around destroying 5 battleships, one at a time, with each battleship getting more equipment and difficulty as the player progressed, and followed by a giant boss fight; it made me feel like I was playing the perfect Gundam game. It also had really good boss fights. However, the game was over filled with cutscenes, protect/escort missions, and even a stealth mission. If the game was only about the boss fights, destroying huge armadas of space ships with one mech, or clearing a fun objective (like getting form point A to point B and back again within a time limit) ZOE 2 might have been the best mech, action game to date.

I'd say GTA IV. Don't get me wrong I loved it and thought it was great, but it could've been so much better.

It looked and played absolutely amazing, I'm one of those people who loved the driving physics (so much so that I can't stand Saints Row or other games with old school crazy driving physics). Liberty City is one of the greatest game worlds ever made in my opinion, it was great to just cruise around looking out of the window. Sometimes I'd get a taxi and not skip the journey but just sit in the back seat literally looking out of the window, it's rare to get immersion that good.

But then it comes to the missions, which are pretty much all go here and kill this guy.

Saints Row 2 is totally different in that there are so many crazy missions and crazy things to do, but doing them for me isn't actually any fun because of the crappy physics, lame gameworld, and awful combat mechanics. When I was playing it all I ever thought was 'I wish I could be doing this in Liberty City, with the RAGE engine and euphoria and all that jazz'.

Darkest of days was enjoyable, but that game had so much raw potential to be great and the developers fucked it up.

Trespasser.

A game with huge outdoor environments, a physics engine that affected every object in the environment, A-list voice talent, the Jurassic Park licence and an innovative control method. In 1998.

Sadly, none of it worked properly. I honestly think that a remake with current gen technology, especially if combined with full motion control for the arm(s), would be fantastic.

I think the Iron man game could have been great... Just the Idea of being able to control Iron man is awesome... But they messed it up with the first game...

I just hope they fixed all that for the sequel because thats the last game that studios ever gonna make...
