A new Pokemon Stadium or even some game like Battle Revolition for the WiiU now that Gen 5 is out.
Final Fantasy 4 given a graphical overhaul. Can you imagine FFIV's gameplay and story with FFXIII's graphics?

Vagrant Story.
It was such an incredible game, and if they could do a remake without the blocky PlayStation graphics. Dear Gods, I would give them all of my money faster than 4Chan could post an allofmymoney-edit.
That, or just Vagrant Story 2. HD or not, doesn't matter. You promised us a sequel Square! Where is it?!

I'd like to see the Tenchu games remade into an HD collection. Sure, there's AssCreed (which I had fun with (at least the first one)) But I always enjoyed the Tenchu games prefered and the 'ninja' aspect: The sneaky stealth killer ninja, not the naruto-wearing-orange-and-shouting everything ninja / ninja gaiden blender-mode ninja.
