Master of Magic. Yes, there have been remakes, but they've all changed the parts of the mechanics that I liked, to the extent that I don't actually enjoy playing them. A real remake of MoM that didn't try to change anything except the graphics and perhaps a few bugfixes would be great.
Yeah, I love this game, I still play it in DosBox. It was really incredible, but imagine if the battle-scenes had insanely beautiful summoning sequences, and if the world map was, you know, simply prettier?

I know graphics never make a game, but MoM would be improved if you could look around and see your army in 3D, but it's still turn-based on a grid. They'd be able to put incredible detail into the character models because the battlegrounds would still be abstract, and I bet elementals would look really awesome, eh?

That said, I'd like them to remake Daggerfall...

System Shock 2. All that would need revamping is the 1999 era graphics. The old maps, dialogue, and music could all just be repackaged as is.

oh, and while at that, throw in Elder Scrolls II: Daggerfall in the list =)

I wouldn't want game re-makes simply because I think they would go down the road of shitty-movie re-makes.
There have been some good remakes, the one that jumps intermediately to my mind is MGS remake for the Gamecube.

I think Fallout 1 was a better story, but 2 had cooler locales. So either of those would make me happy.

Star Wars Rouge Squadron (1 or 2) for the Wii.
I feel like Wii controls, if executed well, could work really well for the series, and on top of that they were made all for Nintendo consoles.

This is making me reminiscent of the days when sequels actually lived up to the originals.

Final Fantasy VII ala the movie. Nothing else needs to be.
I don't think the bat-shit bonkers idea of remaking one of the best RPGs ever made as that steaming pile of mental feces is a good one.

Probably been said before but Final Fantasy VII as long as they do absolutely nothing to the game's storyline

Mechwarrior games like Mechwarrior 3 and 4 that let you customize almost everything on the mechs or at least a sequel to them because the mech assault games for the console are awful compared to the pc games.

I'd love to see a game remake of Zelda :: Ocarina of time, and the remake actually stuck the story line.

Also just for laughs, Conkers bad fur day. The N64 one was awesome. I didn't like the xbox version.

FF7, for obvious reasons, after playing FF7: Crisis Core, I know I have missed much with FF7 (which I never really completed, and don't really feel like starting again).

Mercenaries 2, how I would love to play this game without the bugs, glitches, and better AI.

Bards Tales I II III, the original.

Wing Commander, I love the Kilrathi home world lore.

The 1987 Dungeon Master. Killing and eating purple worms, finding out that the chicken leg you had been munching was rat leg, and so on. It could be great with the new tech we have now. The combat at the time was fun, getting Thud the brainless barbarian to be able to cast spells, worrying not only about your hit points but hunger and thirst was a fun challenge.

I'd quite like to see dark alliance made again, or morrowind. I like games with vast expanses and money to be made
