I am gonna go with Diablo 3 as well. I played the hell out the first two and their expansions (although Diablo's expansion wasn't that great the 2nd one was awesome).
The only other thing is the Witcher 2. I just got around to getting the extended edition via download (legally, I had paid for the original) and I am go through it again. The original Witcher was great fun and I would love to play another (especially if they tweaked the combat and spell system a bit).

The Last Guardian, that new Donkey Kong Country
In terms of games which are not announced but I'd love to see, a new Heroes of Might and Magic game would be great. And a Warcraft 4.

I guess Fable 3, after I beat 2 in 2008 I've been waiting about a year and a half for the third game... That's about it.
It was Alpha Protocol for a while, but now it's out. Still I was waiting for that for 2 years.

I've been waiting since 2003 for Golden Sun: Dark Dawn, and would anxiously await for it's announcement at E3 every year, only to be disappointed. Until E3 2009 that is. Unfortunately since I've waited with great anticipation for so many years, I don't think the game will ever be able to meet my expectations even if it cures cancer and ends world hunger. I'm trying to tone down my expectations.
I'm still waiting on Republic Commandos 2 but that's not gonna happen so realistically I agree with the OP that next Elder Scrolls game needs to come out.
shadowrun rpg/mmo that does it justice. been along long wait with microsoft pissing away the license it sat on for years.
mechwarrior see above, tho smith and tinker is making a new one the fact it is going to consoles worries me to no end.
dungeon keeper, theme hospital, yea bullfrog is no longer around but you would think someone would pick up the mantle if these old classics and revamp them with the same humor.

I'm still waiting for a proper ending to The Longest Journey - Dreamfall, and the supossed episodes that were promised afterwards.
Also waiting for a decent Silent Hill game. 6 years since SH4:TR. Anything after that doesn't count.
