If you have the time to watch all 50 or so, full metal alchemist episodes, i can prommise that you will love them. Elfen Leid is also pretty hardcore

When you first start watching it you may think it's too childish, its a quasi magic girl anime afterall... Then Episode 3 roles around and you find out the truth... of how wrong you truly were... Then you keep watching and you figure out that you weren't only wrong, that it gets worse...

Sounds pretty neat. You've definitely got me interested, at least.

Either my find function and reading skills are broken, or no one has mentioned Cowboy Bebop yet. I think my inner neckbeard is just getting the better of me, but I can't let an anime suggestion thread go by without at least mentioning it.

Black Lagoon- Mature anime about an illegal shipping company. Good Writing, awesome action.
High School of the Dead- Awesome zombie anime. Bloood, guts and really good animation.

I'd recommend Berserk, Vandread and Claymore, three really good and solid series, although the Berserk manga is much better than the series because the series only cover a portion of the whole plot.

If you like more serious stuff, here you go:

Madlax
Noir (done by the same studio, one about a female mercenary and the other about two assasins, or more like one assassin and one girl without memories)
Black Lagoon (serious action)
Ef - A Tale of Memories (psychological relationship stories)
Mind Game (great film but you might be put off by the art style. It's very unique, in fact it changes quite often throughout the film)
Perfect Blue (psychological thriller)
Paprika (sci-fi about the dreamworld)
Girl Who Leapt Through Time (sorta sci-fi about time travel)
5cm Per Second (if you're feeling too good and want to cry a little)
Grave of the Fireflies (if you're still happy after 5cm/s)

And of course Studio Ghibli, Akira, yadda yadda..

Which did people Like better
Monster by a long shot. It's one of the best anime I've ever seen. It might be nothing for you if you're just looking for light fast-paced action, though.

Blood+ and Gantz are alright but nothing special. FLCL is just horrible, imo, the story is pretty much non-existent, it's more or less random stuff happening all over the place. The animation is good, though, gotta give the studio at least this much credit.

What these guys said. Higurashi's fucking awesome and Darker Than Black is damn good. Until the last few arcs at least, it tends to drag on a bit. I think the creators were running out of ideas :/

has anyone mentioned DURARARA yet?

because if not, then i recommend the sophisticated, intelligent, mindboggling, awesome and original DURARARA!

awesome characters include:
a black russian.
a headless irish fairy who's scared of alien's.
a pair of manga otaku's who torture people by acting out scene's in manga.
a butler with the strength to throw vending machine's. THROUGH SHEER WILLPOWER!

and many others aside. if nothing else, just watch it for the awesome characters.

oh, and try look for the dub: it has EVERY AWESOME VOICE ACTOR YOU CAN THINK OF IN IT, NO JOKE!

seriously, look up durarara's voice actors, and tell me you wouldn't want to watch it.

Blood+ is one of my 2 favorites, so my opinion is skewed, but it is good. Slow at times, but very good.

GANTZ was okay, some like it, some don't. I've heard good things.

Monster... haven't seen or heard on it.

Scryed... loved it loved it loved it. One of my Top 5's. Doesn't do exposition well, but what anime does?
What's your other favorite?
