Megaman Battle Network - Bass SP (or whichever version has 3k health).

It hits for 500+ each attack (you can hardly achieve 1500, but then you sacrifice other stats).
Cracks your panels, so things like HolyPanel don't work.
Breaks almost all Life Auras, Life Barriers and even the Special Program one.
Did I mention it has an almost unavoidable 800 damage attack?
It has 3k health. And there is a version which has, if I remember, 4k health.
Constantly has... 300? damage barrier. So you need to do at least 300 damage in one hit to break it, then attack him till the barrier is down and break it again. And repeat.

I have yet to defeat him.

I totally agree. Only reason WarMech is not my pick is because he is not a boss. Kind of like how I really enjoyed the Weapons from FFVII. I like my Bosses to have a good chance of kicking the crap out of me. Not impossible, just really HARD.
On that point, Metal Gear from Metal Gear Solid was a good boss fight too.

Did you like Atma Weapon (guarding goddess statues) from FF6? he was one scary fight for me the first go and half way through he really tries to kill you.

Finding any good boss characters is hard.
If its just the battle, then my prize goes to Persona 3, with Metroid Prime 3 as number 2.

Persona had:
-Epic music
-The deepness of the game concentrated to 1 point
-Actual challenge( I beat him with last of my health, other party members dead)

Metroid had
-Nice ninja techniques
-About right amount of challenge
-An actual conclusion to the story

Pretty sad that those were the only two I could think of. They are just the best I've played.

Edit:
I just remembered handheld games!

GBA had Fire Emblem: Sacred Stones!
It was generic "Big Demon", but it gives real satisfaction to beat! The music makes it feel like....umm... Hero Time!

And then there's Resident Evil. It doesn't have good music, strategy or story behind it. So why is it, that I get so much satisfaction from shooting it with a rocket launcher?

Both Advance Wars on the DS have pretty nice final battles. They even have some kind of prototype boss *characters*.

Looks like making a good boss is lot easier on handhelds.

i think the problem is that developers are becoming increasingly concerned with causal gamers (for this, Nintendo, you will die in your sleep) in an attempt to get more players, and by extension more money. to do this, they've had to get rid of a lot of the harder elements of the game, for example, see the change in ending styles between Fable (and TLC in you had it) and Fable 2. a huge boss fight (or two if you had TLC), versus "Stand here and hold B. wait for reaver to win". i was also quite disappointed with the aforementtion battle in GoW2, which had a huge amount of potential.

i think that because develeopers are making games playable by casual gamers, they've had to make it completeable by said gamers, and that means they've had to take out the hardest part that requires dedication and perseverence, and above all: skill. i remember the final fight from Occerina of Time was hugely difficult if you hadn't got a lot of hearts, and FF7 the second fight with sephiroth was almost impossible unless you'd trained up a lot

Atma was not really hard for me. I am one of those gamers that plays an area till I have exhausted its resources or picked up every item I can before moving on. By the time I got to Atma I was strong enough to go toe-to-toe with him. To me the best FF Games were one and seven. This is mostly because they had the best content and Bosses. I even liked Garland when you meet him for the first time.

I would be remiss if I didn't mention my favorite boss fight from Castlevania: Symphony of the Night: Granfaloon. A giant, floating ball of corpses? That thing ruled, especially the way the bodies screamed as they were shed to attack you.

The best boss fight ever was in Fable at the end ware you get to kill jack of blades and than you get to kill your sister! amazing!

ok so your right on that one but the end was even more worse you cant find him till he shots youand then you take forever to find him after that

Wow, no mention of Pyramid Head? That guy(??) was awesome. I mean he wore a huge metal pyramid on his head! You have to be pretty hardcore to pull that off and not have people laugh you out of the building.

Liquid Snake from Metal Gear Solid 1. I loved how he ran around calling you "brother" with that mocking tone in his excellent villain accent. Fighting him in the Metal Gear, then the hand to hand fight on top of the Metal Gear, and then the jeep race at the end. The guy just wouldn't die. Totally awesome.

But the best villain/boss fight comes from The Great Puma. Oh yeah, Pro Wrestling for the NES. Best villain ever!
