X series [http://en.wikipedia.org/wiki/X_(computer_game_series)] are quite impressive simulation in space game. It's quite close to what Eve Online offers but with direct control of your ship. You can be trader, pirate, soldier, etc.

I find that the Monster Hunter series is a pretty good simulation of, err, monster hunting. If not that, it has a firm grasp of the mechanics and physics behind swinging a gawddamned, gigantic sword as though it's actually a friggin' gawddamned, gigantic sword rather than something with the weight of a Q-Tip.

Mount & Blade (as well as M&B: Warband) is a pretty good medieval combat simulator that's oft labelled as an RPG, but it's fun and not too hard to get into (has a nice way of scaling the difficulty beyond Easy/Med/Hard), and the horse mounted combat is fun in itself.

Or there's always The Sims. I hear that's not too complicated. And pretty Sim-y.

Of course, Gran Turismo 5, if you have a PlayStation 3. Gotta be one of the best racing simulators out there.

Digital Combat Simulator: A-10C is probably the closest you'll ever come to flying an actual A-10 Charlie Warthog, considering that it's the civilian version of the sim the Air Force uses to train their pilots. The developers have even said that if you can play that, you can hijack *ahem* fly the real Warthog.
