I was hoping I would have an opportunity to bump Nichijou or any of the other ridiculous animes I like, but the qualifications were to strict.

Basilisk would probably fit your tastes pretty well. It's got ninjas, monster-like people and at least compared to Naruto it's more mature both animation style- and storywise.

Have a look at Bassilisk, covers the adultish ninja genre quite nicely. If you want more thriller like experiences, Death Note (though second half falls flat) and Monster are fantastic choices.

Puella Magi Madoka Magica is another big recommendation, it's a magical girl anime that may initially look like it's aimed at younger audiences, but stick with it for 3 or so episodes and it should get you hooked and give you a very fulfilling experience.

Basilisk - Think of Romeo & Juliet meets Ninja Scroll.
Hakuouki - eh... it's Bakufu stuff with vampirism in it, but it's kinda girly (reverse harem)
Bakumatsu Kikanketsu Irohanihoheto - Again, Bakufu stuff, but with more occult stuff
Seirei no Moribito - most serious series so far, quite an 'adult' storyline (redemption, salvation etc. etc.) with some god-awesome fight scenes (if you want man-to-man and plausible)
Otogi Zoushi - not sure about this one (I thought it was OK), but it's 'low fantasy' stuff, can be a bit *bwuh* and flat at times though, if intriguing nonetheless

I love action anime like Berserk, Trigun and assorted others but Death note is my favourite anime by far. Yes I have seen Cowboy Beebop, but it is not as good as Death note. That is a fact.

OT: It sounds like Claymore would be a pretty perfect match for you, Just give it a couple of episodes to suck you in, Episode 4 I think was the one that did it for me.

I'm in the same boat. Most recently I finished Mahou Shoujou Madoka (Homura! D:) and before that Bakemonogatari and Katanagatari. All recommended highly. Elfen Lied is worth a watch although I guess it's not for everyone.

Cowboy Bebop is the undisputed king of all anime and I'll politely ignore any word said against it to the grave. Ghost in the Shell is a classic, both film and series.

Planetes is pretty cool too but it's not very actiony.

Also Queens Blade. Why? Because Schadenfreude that's why.

@OP: You better find yourself a database of Japanese animation and just use tags you want for searching (such as animenewsnetwork or anime-planet) as you'll hardly get any useful suggestions here.

I'm going to say yes Naruto, because isn't as childish as you would think. I mean you obviously haven't given it a shot, and later on it'll be dealing with things like the consequences of war, and struggling with the death of loved ones. The author is also pretty good about making an effort at making everything tie in thematically, so you're getting a really solid story.

If you still don't want to give it shot, you might as well try Sword of the Stranger. It's an amazingly well-animated film.

This. Naruto is actually designed for teenagers and as such is better than you give it credit. Granted, I prefer the manga, but the sub anime is good too.

I totally agree the OP is totally wrong with his childish opinion(maybe right about the first series). They even have a kids anime Rock Lee & His Ninja Pals, which is the children version of Naruto. This would rule out Fairy Tail and Hunter x Hunter(new series), my personal favorites.
How about Sword Art Online, I'm surprised no one has mentioned that.

I just finished watching Puella Magi Madoka Magica and I found it to be fantastic. Add another vote for Madoka Magica here. There's nothing quite like it.

Replace ninjas with magical girls, and it's a solid fit.

The problem here is that ninjas + maturity don't mix. Most of everything, besides the original Ninja Scroll, is going to be aimed at kids - because that is who would still be into ninjas at any given point.

You oughta expand into the dramas and mindbenders; the only reasons that, I personally, still watch anime.

Anything by (the late/great) Satoshi Kon: Perfect Blue, Millenium Actress, Tokyo Godfathers and Paranoia Agent. All golden.

There are also a couple dramas I'm really into that are recent or currently airing;

Ano Hana: About a kid who sees his dead friend's ghost and is pushed into reuniting the old clique, for old time's sake. It's kind of like "Stand by me", and make me cry like a little ***** at the end of each episode (and especially at the end)... and I'm a 28 year old man... and only somewhat ashamed of that fact. It was sooooo good, watch it with a chick and you are guaranteed brownie points.

Natsuyuki Rendezvous: Another drama about a ghost seen a by a dude, but in this round it's trying to keep him from hooking up with his widow. Very good show, and great art style.

Kokoro Connect: It's about a group of high school students that are screwed with by some kind of deity into swapping bodies at inopportune times, and later in the season, other things that don't bode well in public. It's pretty good as well.

Desert Punk: Kind of a post-apoc about a dude that sells himself as a mercenary, and it's got quite a perverted streak to it (but it's hilarious). The selling point, for me, is that the main character is the ultimate anti-hero. Only out for himself, and if he gets boned over a job, he'll make everyone suffer for it... and you just CAN'T kill him, he's too slick. One of my favs... and the dubbed version rules way more.

The Tatami Galaxy: A mind-bender that surrounds a dude in college who is trying to take advantage of the best years of his life, and every episode seems to take place in it's own universe with events not affecting the others (so much). It will all make sense at the end of the 11 episode run, so I don't wanna ruin the surprise for anyone. So worth it, imo.

+points to the suggestion of Katanagatari. Art style like it's for kids, but it's pretty brutal and overall a good show. Baccano! and Durarara are two of my favs as well, but it's more for the types that like the disjointed plots of say, Pulp Fiction.
