So i have currently just moved into a place of my own and found a meat wholeseller. So i buy in bulk to save some money and ive just wondered when if the best time to tenderize steaks (what did you think i meant). Before i freeze em, When i defrost them, or just before i put them in the pan. Sadly i dont have a grill or anything else so pan cooking is all i can do at this stage.

As well as any tips such as seasonings (how much, how little or just trial and error ect.)

This has got to be the most misleading title ever

OT: I'm not entirely sure, I've heard a week but I've also herd a month. Maybe go back to the butcher and ask him?

Try garlic butter or garlic cheese, feels good

I prepare my steaks a day or two before hand and marinate them in the fridge until I cook them. that might just be me though,

Personally, I'd do it after dethawing them. With beef, its typically best to keep the surface area as small as possible until you're preparing them for cooking. In general, though, this is my instinct talking. I don't know the science behind how tenderizing is affected by freezing.
Don't hesitate to salt your meat a bit before cooking, either.

Yeah next time i go down ill have to have a look. Ill give it a go though

If you're going to freeze, I'd say put the meat it the freezer by itself and pull it out maybe 1-2 days in advance of use, season/marinate and leave in your fridge till you're going to use it.
Mostly because being frozen won't do much in the way of seasoning/marinating because, well, it's frozen, nothing seeps in or does anything.

So you're better off using it as you go, plus that leaves you more leeway on what you feel like eating, instead of having to pick from a batch of pre-seasoned things.

I'd say trial and error for seasoning and marinating, everyone has their own taste to things and it's not something you can really be told.

I personally like to simply cracked pepper/rock salt each side just before I cook them. That, or slice some garlic, crush it with the side of the knife, then cut a small slit into the steak and insert the sliver of garlic. Pepper/salt to taste. Simple, yet effective.

I find this thread hilarious because this is EXACTLY what I was expecting it would be about.

Anyways, I'd suggest tenderizing your steak after letting it defrost(but before you let it marinate). As for seasoning, that's something you really have to figure out for yourself. I personally use a lot of seasoning, but not everyone likes their steak as spicy as I do.

I dunno, whenever I get meat I just toss it in the freezer where it awaits thawing then cooking for later consumption. Nobody I know has ever tenderized meat before, so I have no idea how it alters taste or texture, so thus, I am useless and must suggest google should this thread fail.

Also, why do people think this thread is misleading? I thought it was fairly self explanitory.

First off, don't beat it, use one of these: http://www.kitchenkapers.com/simply-better-45-stainless-steel-tenderizer.html I have had the best steaks after they have been given a going over with one (and you don't flatten the meat off).

I wouldn't do it before I froze it. Do it when you are going to cook.

Let your cooked meat rest a bit before you slice it or eat it, it will be more tender.

If it is good quality and a nice cut (like a rib eye or something) then just a touch of salt and pepper and let the flavour stand for itself.

Alright cheers maybe if i get some spare cash ill pick up some tools. An no it's not really good quality, basically bulk budget rump. Uni student means poor. But yeah cheers and ill remember if i decide to treat myself :D
