Because both console's constantly want to prove they are better, even though they are EXACTLY the same. At the very least I'm glad the "Oh my consoles graphics are better" argument has died down. But yeah, the Xbox fanboy brings up the recent Sony security crisis, and then the PS3 fanboy will counter with basically the same argument, because Xbox Live crashed a little after the Halo 3 release, for about the same amount of time, which a lot of people seem to forget.

When these arguments die down, the same fanboys for both sides will crawl out of the woodwork and will start throwing exclusives at each other like dodgeballs. Long story short, everything causes flame wars. Basically each community has its problems. The PC community is full of elitist pricks (NOT ALL OF THEM ARE ELITIST PRICKS! <-- just let it be known that I don't think that all PC users are elitist pricks. Just among the gaming mediums, the PC seems to have the highest concentration.) The Xbox and PS3 collectively have the two worst general communities being the CoD and Halo communities, and they bicker over small differences like their lives depend on it.

Fanboys and by proxy flame wars are both indestructible. All you can hope to do is to not sink to that low a level, and avoid flame wars as much as possible.
