The difference between that version of twice baked potatoes and potato skins is that you put the potato back in where you don't with potato skins. The only real difference between the two types of twice backed potatoes is the presentation. One uses a whole potato and the other uses half per serving. I prefer halves, but they don't look as impressive. As for the topic at hand, my favourite potato-based foods are tied between fries and jacket potatoes, I particularly like the latter with some nice grated Cheddar cheese on top.

Amen, I can't get enough of baked potato wedges. Just sprinkle them with plenty of olive oil, put any kind of herbs on them, little salt and voila; easy and delicious potatoes.
