What I like in a series: A good story that is very well written, characters is really important, humor, the setting must be good (I don't care if it's steampunk or Scifi or fantasy, etc) and lastly I want something that makes you think. (Good humor series don't need anything of the tings I have stated. As long as it's funny)

So, do you accept the challenge?
Get Ghost In The Shell: Stand Alone Complex (1st Gig). You don't need to have seen any GiTS stuff before it. It's probably the best written anime out there and makes you think a lot (transhumanism is a strong theme and is the meaning of self). The action is all very believable and well-done. The only bit of fan-service is in the Major's character design, but it isn't really played-up much - you get used to it and soon realise that the world they're in is quite sexless (and various other things make it more normal).
The series isn't the funniest, though it has it's moments. For the more light-hearted stuff, see Cowboy Bebop or Samurai Champloo.

I'll also recommend Last Exile, but not as something to get you into anime. It gets a bit weird quickly and the main characters can be a bit emo-annoying.

mushishi. i like it buts not an action-anime. very calm. this are one-shot episodes, so you dont have to watch them one after another.

animes made by studio ghibli are good.

hotaru no haka or grave of the fireflies i a very good movie about 2 children which try to survive the ww2. Its very sad.

Paranoia Agent and Welcome To The N.H.K. if you're looking for a more psychological (but no less brilliant) experience.
They're great. Really really great. :)

Edit: NHK is very funny too IMO, not too sure about Paranoia Agent in that category...

Fucking Outlaw Star!

Interesting characters? Check.
Lack of annoying female voices? Check.
Humour that doesn't detract from the story? Check.
Long enough to be keep you entertained but not so long that 50% of episodes are fillers? Check (25 episodes).
Seriously, this is the first 'proper' anime I ever watched (I don't count DBZ). You won't regret it, it doesn't have an angsty, douchebag undercurrent like a lot of newer anime series.
Only problem with Outlaw Star is that they changed the artists halfway through... it turns FAAAAR more generic anime halfway through, which is an awful shame as the first half is fantastic. Also the grappler fights are OTT in my book (like the OP, I'm not a massive fan of anime), and the ending is a bit odd... but still, this is well worth a look!

Only anime I think you'll like from what you said is "Monster". Gritty thriller, with no over the top stuff.

But if you didn't like Death Note I don't think you should get into anime at all, it's the easiest anime to ease you in, maybe together with Code Geass.

avatar is in a similar art style, but it was made here in the US so you might be able to relate to it more. not sure if its considered an anime or not
Anime is per definition Japanese, so it ain't anime. It certainly has quite a lot of anime influences though and it too comforms to the points raised by the OP; mature storyline, mature and well-fleshed out characters (despite them being children), humour that doesn't distract (and sometimes is a vital part of the story and setting), interesting and entertaining fight choreography, avoids annoying female cliches, etc.

It's one of those golden cartoons that come by very rarely. And you know what I like best about it? While it's aimed at children it does not lowers it standards or becomes a simplistic thing. It treats children like intelligent human beings and presentes mature themes making it a show that makes both children and grown-ups think, keeps them both interested on equal grounds. Very few cartoons manage to do that, speak to 2 groups that are so different on an equal level.

Cowboy Bebop.

If you like action, great music and that kind of beautiful retrofitted future ala Blade Runner- you'll love Bebop.
There really is no reason why anyone would not like it.

Welcome to the NHK.

So, What I dislike about anime is the art style in general
All anime art is the same so you'll have to get used to it. Well not the same, but similar.

the over the top action scenes (Combat should not be "OMG HE IS THROWING PLANETS AT HIM!!!" it should be fairly "realistic"),
It's a slice of life, so no combat at all.

the depressing tone of some of them (I want to be entertained not depressed)
NHK is pretty depressing at times, but it does have a happy ending. It's one of those things that starts off pretty depressing then gets less depressing then more depressing as it does on.

the girls voices
Not really much specific here, the main female character doesn't have, what I'd call an annoying voice like Misa from Death Note or Sakura from Naruto.

the girls HH cups
Only one woman has large tits, but it isn't portrayed in a comedic or sexual way. Realistic.

What I like in a series: A good story that is very well written
Yes. Unless you count that bloody annoying arc towards the end that's a few episodes long, the story is pretty well written. It's simple and touching.

characters is really important
Check. It's a slice of life, the characters have to be important.

I thought it was funny >.> But then again that type of humour isn't for everyone.

the setting must be good (I don't care if it's steampunk or Scifi or fantasy, etc)
Modern day Japan. Nothing really special about it.

and lastly I want something that makes you think.
This is where NHK excels. It deals with issues such as suicide, social alienation, abuse, religion (more so in the novel) hell, even a little bit about the internet aswell. And if you read the novel it's based on, it also deals with drug abuse.

The reason most people hate anime is coz they are sick of mainstream shounen stuff like Naruto, Bleach, Death Note, FMA. There's no guarantee you'll like NHK, but it isn't ZOMGLAZERROBOTSINSPACE. It's quite down to earth, and in my opinion, enjoyable.

And I normally don't like slice of life, but there you go.

Also, on a final note, watch the sub and not the dub. I hate to come across as one of those SUBSRBETR anime fans but really, the dub is absolute tripe.

I do and I submit Baccano! to you.

Synopsis (via MyAnimeList): During the late 1930s in Chicago, the transcontinental train, Flying Pussyfoot, is starting its legendary journey that will leave a trail of blood all over the country. At the same time in New York, the ambitious scientist Szilard and his unwilling aide Ennis, are looking for missing bottles of the immortality elixir. In addition, a war between the mafia groups is getting worse. On board the Advena Avis, in 1711, alchemists are about to learn the price of immortality.

Watch it in English.
Bravo... that looks kinda good! I'll give it a shot!
I hope you enjoy it. I'll make one last suggestion with Eden of the East. Yet again, watch it in English. Also, fun fact, the opening song is "Falling Down" by Oasis.

Synopsis: On November 22, 2010 ten missiles strike Japan. However, this unprecedented terrorist act, later to be known as "Careless Monday," does not result in any apparent victims, and is soon forgotten by almost everyone. Then, 3 months later... Saki Morimi is a young woman currently in the United States of America on her graduation trip. But just when she is in front of the White House, Washington DC, she gets into trouble, and only the unexpected intervention of one of her fellow countrymen saves her. However, this man, who introduces himself as Akira Takizawa, is a complete mystery. He appears to have lost his memory, is stark naked, except for the gun he holds in one hand, and the mobile phone he's holding in the other. A phone that is charged with 8,200,000,000 yen in digital cash.
It was neat! some things that annoyed me was the quick random scene changes. is it going to be like that all the way?
