Most of my favourites are fairly old school, including good old City Hunter. Doubt any of the kids today even saw that one.

While it itself is not anime, Megas XLR heavily parodies it, as well as American pop culture. You said you didn't want over the top stuff, at least to start, so I'd recommend holding off on this until you let some of the milder stuff get the foot in the door for you. I wish I'd remembered this series earlier for some other threads, as it does a decent enough job of exposing the uninitiated to the tropes, while still coming off as American. Plus, It involves a giant robot with a car for a head, and there are entirely too few of those.
Great Teacher Onizuka is also a relatively transitional series. Basically, a former Biker uses sheer force of will in an effort to become the greatest teacher in the world. The first eight episodes are basically background information, and the last few slowed down a bit, but the middle was an excellent slice of life story.
If you find that you enjoyed Cowboy Bebop, I'd recommend picking up some of the Lupin III movies/OVAS. The characters of bebop were loosely based on the main cast of Lupin III. Castle Cagliostro was directed by Miyazaki, and Steven Spielburg is quoted as stating that it has one of the best chase scenes he's ever seen.
I only recommend secondary series because I can't think of any primaries that haven't already been mentioned.
Also, while not anime, the Ace Attorney series of games are point and click adventure games for the DS that carry a strong story with an excellent cast of characters. I'd recommend finding some translated japanese roms or the international edition(I think one exists. My friends said there's one w/ multiple languages). The american release tries to shoehorn it into taking place in america. Apparently bento boxes are known as box lunches and feature wagon wheel pasta and donuts...

Instead of the usual series' given by the others, I show you Miyazake.
His work is reaaally good movies, with weird premises and epic tales.
Personal favorite is Porco Rosso: A WW1 flying ace is hanging out in the Mediterranean, branded an outlaw by the newly fascist italian govt, and is making money as a bounty hunter. Also, he's a pig, somehow. But anyways, seaplane pirates, overenthusiastic American villain (He's a pompous fool), etc etc.

(Good humor series don't need anything of the tings I have stated. As long as it's funny)

So, do you accept the challenge?

If you don't like it you don't like it, I dunno why peapole constantly try to force themselfs to like something...

It's the same thing if you tryed to enjoy stapping yourself in the leg even if you really hate it.

Try Ergo Proxy it's pretty awesome... not many anime cliches either... the art styles distances itself pretty well too...<.<

And of course Serial Experiments Lain... though it is pretty bleak...<.<

I see it like this, To make my entertainment as entertaining as possible I need to broaden my horizon. I have tried some anime that sucked. so I asked the excapist because I know the majority here loves anime. I found the show Baccano! which I really starting to like :) so I'm pleased with what it lead to. there is a difference between forcing and giving it another chance.

I watched the trailer... It was weird. Is the show that weird or is it just he trailer?

I didn't ever watch the trailer, but I would say that the show is not 'weird' as such, more dark and complicated.

Not too complicated to follow, mind you, and the gecko ending (the anime tied it all up, while the manga continues) took some of the edge off it, but it is still just... just...

It's brilliant, it really is, even A Song Of Ice And Fire didn't leave the same impression on me as this did.

Give it a try, you have nothing but time to lose.
