Run 'n Gun combat is running at/around opponents firing as many bullets into their hitbox as possible, in hopes of making their own aim more difficult. It is not running away while gunning, and is not a particularly fast combat strategy. However, it is not only important whether or not the games combat mechanics fit run n' gunning. If you can run and gun, but only have a revolver with 14 bullets and no ammunition in the vicinity, it's still not a viable idea. This is all theoretical, I know absolutely nothing about Left 4 Dead.
