I would just watch them in order of release, that's how they were designed to be watched.

Personally I'd start with the 2003 Hulk movie, despite what people will tell you it's not that bad, much better than the Incredible Hulk if you ask me, which you can basically skip as it doesn't add anything to Bruce Banner's character development.
That movie('The Hulk) is not part of the MCU.

'The Incredible Hulk' half avoids invalidating 'The Hulk', so it's not impossible to kinda squint and see it as part of the MCU, but why would you?
For starters, it's just Hulk. Second, it introduces Bruce Banner and the Hulk which The Incredible Hulk doesn't do, and both movies lead equally well into the Avengers.

It's also pretty obvious the Incredible Hulk is meant to be a sequel to Hulk, even if it technically isn't considered part of the same canon. Hulk ends with Bruce Banner having fled to South America, The Incredible Hulk begins with Bruce Banner hiding out in South America.

'The Hulk' was TERRIBLE.
'The Incredible Hulk' is pretty good. Better and better every time you watch it, in fact.
The Incredible Hulk was okay. It didn't have an amazing story or great action though the way Hulk did. Hulk is brilliant at times, and simultaneously very flawed, but I think that makes it more interesting to watch than a merely adequate blockbuster action movie.

No. It was NOT a sequel.
In very broad strokes it can function as a sequel because Marvel didn't think there was any point in telling the Hulk's origin story again in their reboot when it had just been done a few years earlier.
'Hulk' is flat contradicted and invalidated by TIH in plenty of ways.

The Incredible Hulk's story is actually much more interesting, interwoven and integrated into the rest of the MCU's mythology than people actually understand. Most people just don't pay enough attention.

Hulk was just 90% garbage.

Ang Lee's 'Hulk' is NOT a part of the MCU and it is definitely not part of the movie canon.

'Incredible Hulk' is, and despite the actor change it is supposed to be the same Bruce Banner and Green Guy as in the Avengers.

This is a pretty interesting article on it I found a couple weeks ago, guy actually did all the calculating to cut the entirety of Phase 1 into chronological order...Apparently all told it comes to 12 hours...so..yeah, that's a thing that can happen XD
