Why settle for an iMac when you could get this^?
First off. Watercooling is completely unnecessary. I've built air cooled systems and had them overclocked beyond many water cooled builds out there. It's all about efficient air flow and good cable management.

You also neglected to use SSD (Solid State Drives). Solid State drives are generally smaller in storate (80gb - 120gb) but they are not like standard drives. An SSD's storage works basically the same way as RAM does, this results in much faster performance. Ideally if you want the best of both worlds you'll set up 2 X 80/120gb SSDs in RAID and then have a 2nd 750GB+ standard hard drive to store things like movies, disk images and other media. The idea is to have all your games and computer programs running off the SSDs and have the rest of your storage put onto the standard hard drive.
Good call having a 3rd card for PhysX, BUT you could've gone with another GTX295a to fill the same roll.

Also a good call on the WD Raptor hard drives.
