Chie Satonaka from Persona 4 because she loves kung fu movies and steak, and she's my favourite female character in video games because she's just so awesome a person.
Rin from Katowa Shoujo because she's is slightly crazy and one of the most interesting people to talk to in anything I've played.
Dante from the original Devil may cry series, particularly Devil may cry 3 and if I need to explain why I'd want to invite Dante then you are all crazy!
Thinking about it, a conversation between Rin and Dante would be incredibly entertaining.

-Uncle Yar from S.T.A.L.K.E.R. Clear Sky and Call of Pripyat. Seems like a chill dude with some mad stories to tell about all the crazy stuff he's seen.
-Either JC Denton so I could pretend I was all high-brow and stuff, or Adam Jensen so I could feed him candy bars and get him to punch through walls as a party trick.

Morte (Planescape: Torment) because he'd be a slick skull to have around. And funny remarks.
Magus (Chrono Trigger) Always wanted to hear the story from his perspective. Besides he seems like a swell guy. Would like to know a little bit more about him.
Heavy Weapons Guy (Team Fortress 2) There is something cute, cuddly, and warming about this guy. Like in the comics when he gave some kid ten thousand dollars for making the kid cry. I can't help but go "naaaw!" At other times he's just death incarnate.
...The dinner would be glorious...and silly...

And hmm... Maybe Locke Cole from FFVI so I can convince him and Celes to get their heads on straight so they finally get together properly? I mean, he is shorter than her and that's usually a turn off, but come on. They're obviously in love. Always bothered me that Locke was so hung up on Rachel and that it made Celes sad, but she never pushed him about it either.
