well they have no money in Star Trek so i guess you could get the crew to go about their business while u just use and abuse the ship.

I was going to say an Absolution command ship from EVE, but a functional Star Forge is better.

Easy, I'd have a companion android, preferably one that can shapeshift at least slightly so that they're something new all the time. Can you tell I have commitment issues? :p

Second to that would be a holodeck, of course, though in there nothing I actually do would matter in the real world, hence why a companion android would be so much better. Just imagine having a loyal and intelligent partner bound to protect, comfort, accommodate, and enrich you. Of course I'd also support such an android getting free will and full sentience and would not stop them from wanting to do their own things, as long as they wouldn't completely abandon me.

Yes, those things around it are galaxies and they are used as shurikens.
If we're going that route I'd just want the ability o use spiral energy and intrinsic knowledge of anything created with it. Get in a fight? Blast the opponent away with a burst of spiral energy. Find myself in a war zone somehow? Mech time. Driving around and about to get in a car crash? Produce a shock-absorbing suit of armor from pure will. Hell, for that matter, never pay gas bills again by creating a car that runs on spiral energy.

Or if it has to be something that's physical to begin with, The newest version of the Iron man armor.(stored in the bones and made from nanobots)
