Note that you don't have to constantly play the game; you can just stop, if you want, you just can't ever play any other game. You cannot play with any mods or new skins or other third-party modifications, but you can play any content that is created with tools provided with the game as it ships (so custom maps, custom items, etc.). Also (thanks to Lucyfer86 for reminding me!) you get all official expansions and DLC to the game in question, if you want.
Multiple games in a series count as one if and only if they are narratively tied together and form a cohesive whole such that they are somewhat incomplete without one another, so the Mass Effect or Half-Life series count as one game each, but Civilization IV and V count as two separate games. Yes, there is some gray space here, but try to keep on the side of narrative cohesion.
Other than that, the game(s) must have been completed and released to the public before no later than December 30th, 2012, so no waiting for "a game that includes all other games".
