Now if somehow there was a way to completely turn me into the stereotypical fantasy elf (pointed ears, immortality, agile, etc.) then I would go through with it without a 2nd thought because I love elves and as a kid wished they existed so that I could be one.

As you age, many people find that time appears to speed up relative to how old you are, after all. Therefore if you were immortal as you pass into the centuries regardless of what experiences you have, the days would appear to pass so fast would it really be worth it at all?

realize that you can still die if you suffer physical trauma. All this immortality means is that you won't die of sickness or old age.

Live for a few millenia and cap yourself when you get bored. That would be my plan.
