The original developers were Japanese, and they were looking for an english translation for "stubborn ape." For stubborn, the word they found was donkey, and for ape they found kong. At least that's what I heard. It's still pretty dumb.

Donkey Kong, how can an ape be a donkey?

Wikipedia says the creator thought "Donkey" meant stupid. He was laughed at when he proposed the name but the name stuck.
