YOU will have a hard road ahead.. I always look for games like that but you pretty much have to rely on older games. Fallout 3 - New Vegas, Oblivion and Skyrim allow some customability but not to the degree of older games.. the last game that I know that had a full D&D type "roll your character up" aspect was NWN2 and before that the Atari AD&D game Temple of Elemental Evil.
I miss the old AD&D gold box games or the Dark Sun games of the 90s.. I don't know why they aren't made like that anymore. Hell.. even Bards Tale and Ultima had great character customizations and they weren't in the D&D universe so we cant claim its only D&D that has stuff like this.
MMOs are the only games I know that offer that and why I am always going back to EQ1-2 or WoW.
