FLCL <---All time fave
Death Note (though I am suffering a bit through the second half of the series...it's so good that I keep going)
Trigun
Tokyo Godfathers
Petshop of Horrors
Elfen Lied
Hellsing Ultimate (you owe it to yourself since you liked Hellsing)
Vampire Hunter D: Bloodlust (can't remember if you mentioned that one or not)
Anything directed by Mikoto Shinaki
Excel Saga (worth all insanity for the final episode...if you're not offended or disturbed by something by the end, the director didn't do his job right! I love it!)

Where to get anime descriptions (go down to left hand corner for browsing anime by "insert category here"): http://animenfo.com/
Where I get my fix: http://www.rightstuf.com/rssite/

I've got to recommend Rahxephon, one of the best that I've seen, and according to your described tastes in anime, I know that it's right down your alley.
Also, check out the OVguide. It has a web page that is dedicated to the listing of all the most popular fansubs, and most are Mega Video free, which is always a plus.

One piece is to bad if you watch all 380+ episodes. Japanese only, no American 4 kids.
Well Funmation did redo the 1st 50 episodes in a real nice bloody manner.

Trigun, Slayers... not to bad either.

Finishing up Initial D Fourth Stage this weekend, so I'm looking for more good stuff.

What I consider good:

Limited-run (no 300+ episode cookie cutter anime... unless it's just unbelievably good)
Intelligent (I don't want the anime equivalent of Spongebob Squarepants)
Overarching story (Don't want anything that each episode is it's own separate storyline)
Mature (not tentacle mature, but then again, a tentacle every now and then can't hurt)

Basically anything that would appeal to an audience older than 21.

I prefer fansub stuff, but can tolerate US licensed stuff if it meets above critera and has original Japanese audio with subtitles.

What I've seen and enjoyed.

Project A-ko
Dominion Tank Police
Fist of the North Star
Ghost in the Shell
Serial Experiments: Lain
Evangelion
Cowboy Bebop
Trigun
Full Metal Alchemist
Akira
Urotsukidoji
La Blue Girl
Cool Devices
Hellsing
Record of Lodoss War
Robotech/Macross
Initial D
Chobits
Love Hina
Wangan Midnight

I'm sure there's more, just don't recall the names right now.

And please, no Naruto or DBZ.
Nerima Dicon Brothers is like 13 episodes i think, it's really musical but funny.
Desert Punk is hysterical and it's like 26 episodes. it's like one of the best animes I've ever watched

For Mature, Gantz is pretty high up. That is, if mature means 'only mature people can watch'. There's lots of violence. And I do mean LOTS. It's like a series of violence! It does have it's emotionally mature moments, too, and it pulls them off really well. And while there are sort of short 'arcs', it all fits into the overall story, one of the few anime's I've seen that actually does it well. There are 26 episodes and the story, while actually quite simple, is surprisingly interesting (as to an overarching 'why the hell is this happening?' question). This is only my opinion, feel free to disregard it.

Don't watch it if you're squeamish. It's not for kiddies.

Oh yeah, and Denno coil starts off kinda slow, but gets amazing as it goes on.

Check out Rozen Maiden

I won't ruin anything, so I'll just say that it has a pretty solid story and an ear-catching sondtrack.

Well, as others have said, I can recommend One Piece. I have seen alot of anime and so far, nothing in television or movies have even come close to the epic awesome that is One Piece. It's long, currently at episode 400 but well worth it. Heck, when I discovered it I watched 65 eps in one sitting.

For a little more detailed info, both animation-wise and story-wise it starts out slightly childish, which is probably why 4kids picked it up and sodomized it severely, only to drop it when they realized where it was going. Anyways, starts out slightly tame but gets more and more mature as it goes on. From the beginning it's well thought out, moves fairly rapidly for a long-running anime, overarching story, with major story-arcs that can take almost 50 episodes. The arcs tie in with other arcs as well as the story on a whole so it's a cohesive world.

There's awesome action, laugh-out-loud comedy, emotion and awesome characters all around.
Also, keep in mind that the manga isn't finished so there's fillers from time to time. HOWEVER, unlike Naruto and Bleach and other long-running shounen animes the fillers are actually good most of the time and on more than one occasion they're really good.

So, if you got some spare time I recommend you visit www.kaizoku-fansubs.com and get a taste. To give it a real and fair try I recommend watching at least the first 44 eps, to get a feel for the world and everything OP has to offer.

Another recommendation is Tengen Toppa Gurren Lagann. 27 episodes, story moves REALLY fast, animation made of pure win, same goes for the characters. A mecha anime that really knows scale, I mean holy crap. It's kinda like One Piece if you swap the pirates and ships for awesome mechas. To get a feel for this one it's enough with like 5 eps, an hour and a half that you most likely won't regret :D

FLCL is amazing, Death note is also pretty awesome, i've heard good things about King of Bandit Jing, Claymore is pretty good for the fight scenes, but the story gets a little repetative and Haibane Renmei is a very short, very worthwhile anime.

Holy cow, SE:L [http://myanimelist.net/anime/339/Serial_Experiments_Lain]? I really liked that anime! That was my first one before venturing completely into the anime world.

Yoshitoshi ABe, which was the original creator of SE:L, also created another anime set in another universe. This ohter anime is now my favorite, and it made Yoshitoshi ABe my favorite guy within the anime buissness. I'm talking about Haibane Renmei [http://myanimelist.net/anime/387/Haibane_Renmei].

If you enjoyed SE:L, you'll most definitely love Haibane Renmei.

I tend to stick to anime that's not shounen (Japanese, meaning "kid/boy") like dragonball/naruto and so on. I like to watch anime's that relies on emotions and such. Here's a list of what I watched after I started with SE:L and Haibane Renmei:

Dennou Coil [http://myanimelist.net/anime/2164/Dennou_Coil]
Noein - To your other self [http://myanimelist.net/anime/584/Noein_-_Mou_Hitori_no_Kimi_e]
Kamichu! [http://myanimelist.net/anime/489/Kamichu!]
Air TV [http://myanimelist.net/anime/101/Air]
sola [http://myanimelist.net/anime/1965/sola]
Kanon 2006 [http://myanimelist.net/anime/1530/Kanon_(2006)]
The Melancholy of Haruhi Suzumiya [http://myanimelist.net/anime/849/The_Melancholy_of_Haruhi_Suzumiya]
Lucky star [http://myanimelist.net/anime/1887/Lucky_%E2%98%86_Star]
Saikano [http://myanimelist.net/anime/529/Saikano]

By the way, some people like Elfen Lied [http://myanimelist.net/anime/226/Elfen_Lied] and such, but I preferred Saikano better. It's basically the same idea.
I have to agree with Melancholy of the Haruhi Suzumiya, mafia mermaids alone is why it is worth cheeking out. Though for anime it depends mainly on your tastes. Now for the point Chobits and Love Hina I would suggest [ur=http://www.animenewsnetwork.com/encyclopedia/anime.php?id=3592]Midori Days[/url] which has a nice bit of humor as well as cuteness.

It is one of those tough animes to describe without going into an episode. The idea is this tough guy with his devil's hand kicks ass but becomes a bit of a bit of a longer because of it. Worried that the only love he will have is with his hand, a girl appears where his devil's hand was. This is enjoyable anime with it's own cuteness that is good in the sub and dub form. Though is better in the sub form. Though the manga [http://www.onemanga.com/Midori_no_Hibi/] is worth a good read just like the anime is. A short 12 or so episode series. It is one that is a luke warm anime, in that it will make you smile simply because of how cute it is while laughing at the action and the humor. Just like Chobits it is good in sub or dub, but you loose out in so many good jokes that the sub is much better. T

From Fist of the North Star a good anime you will enjoy would be Baccano [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=7492] which is this odd and bloody anime with the musical charm that any Bebop fan would enjoy that is hip to the jive as it bounces and slices on it's way. It is an anime much like Folly Colly one must watch to have a clue what is going on. The first episode asks the question of who is the main character. The story itself was interesting while presenting itself in a way that watching it multiple times gives you more incite and more of the story.

Another in the same vain that would be enjoyable simply because it is a rather short series is Claymore [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=7028] bloody anime with girls kicking ass. Not one of the best stories since it is about a character getting to her breaking point and growing from that. It is one anime that didn't get wrapped up because the manga was still going on. What makes the series so interesting is to take on there enemies to fight it. If they lose themselves they become what they wish to destroy. This is a series that is an enjoyable watch threw, but for some this is just that and nothing more.

Hajime no Ippo [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=1139] is a sports anime that really is done so well. This is one that sucks you in while being a series about boxing the fights and drama of it is really enjoyable. The animation and everything is just so great. The series itself got a reboot that people loved it and wanted to continue doing it after the series was over with was how good, and how beloved it was. Instead of trying to reboot it in anyway, they just continued the story with New Challenge [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=10387]plus this is the series that I have backed up on Megaupload to give to others simply because the torrents for it are so tough to find.

A good mech anime would be Gun x Sword [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=4920] which is a great series that is only good in sub. The whole of the series hinges on there being the villian is a villian is trying to help the world by eliminating the very evil in it while the hero is just a guy who doesn't give a f**k and wants to take down the man who killed his wife. It is an anime just like Cowboy Bebop where the characters are done so well that it never gets old no matter how many times watched. The series doesn't take itself too serious, yet seems so human. It fallows many things that Trigun did. That is why I suggest it simply because if you like Trigun you will like this.

Detroit Metal City [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=10172] is a kick ass anime that in the same vain of Spinal Tap makes fun of Metal while kicking ass. Involving anything metal, it is one I would not suggest showing to anyone who has not been into anime simply because of how extreme it is at times. A rather short anime that has only 12 or 13 episodes that are about 15 minutes each. I have fallen back in my chair laughing while enjoying this anime is how much I have enjoyed this series even though it is short.

Bludgeoning Angel Dokuro-chan [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=5094] is one of the bloodiest animes I have seen while it being a romance comedy. About 8 episodes which in every episode the main character dies just to get resurrected for it to happen again the next time the the gal gets angry at him.

RahXephon [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=849] is a good one simply because it beats the living s**t out of Evengelion in quality, better characters, and it isn't as easy to understand as Evengelion. Though this is a series I suggest you watch in the sub NOT dub because the dub will make no sense to most people. This is mainly because the guys on dub wanted it to be like Evengelion when it was so much better then that. So the dub isn't as good as the sub because of that.

Kasimasi - Girl Meets Girl [http://www.animenewsnetwork.com/encyclopedia/anime.php?id=5835] is one most people will toss aside simply because it asks questions about love just like Chobits. The summary of it is a bit odd because of that.
Plot Summary said:
Hazumu was a shy boy who enjoyed gardening, collecting herbs, and long walks in the mountains. One day he finally worked up the courage to confess his love to Yasuna, but she rejected him. Feeling dejected, he wandered up Mt. Kashimayama to the place where they first met to reconsider his feelings. After getting lost, he wished upon a shooting star which turned out to actually be a crashing alien spaceship. Although he was hit by the falling ship, Hazumu survived the crash thanks to some body reconstruction by the aliens, only they got it a little wrong. Now that he is a she, Hazumu stumbles head-first back into his social life and relationships only to find that the entire landscape has changed.
Good as it is, but beware that the ending has made many girls cry. So be warn of that when watching that with others that crying may ensue, but it is so good that it is worth it.

Since I am getting lengthy I will stop there hopefully this will help you out with your search for good anime. Though a little helpful tip, always have more anime downloading then you are watching. It is more enjoyable to have anime to watch while you wait then just waiting for anime to download. Sorry if I was a bore with any of that.

Ouran High School Host club:

-Very good english dub (first and last time I EVER utter those words)
-Amusing
-Comical without being obnoxious
-Interesting characters with surprising depth
-30-odd episodes: enough time to get going but not to overstay its welcome
-The anime aspect makes sense:
(I mean, ever seen a manga to anime series where the whole 'movement' thing seems useless, where they pan out and have one person walk across a stretch of land for like four minutes? Or when someones talking they just zoom in on their face for like four more minutes? Its annoying in my opinion)

Well since you want a story bound anime I can't say much apart from hellsing ultimate (OVA) because you've said you've only seen hellsing.
