Please get her either the SNES or GBA version, the games are near perfect and need no complicated controls, it is simply amazing.

Fable is about as simplistic as you can get from an RPG these days. Oblivion would be a good start, but I'd say Dragon Age: Origins for it's story. I'd say it's gripping enough to learn it's slightly more complex setup. Just have her on casual for the first run through.

Its no Crysis game visually, but it has a cohesive visual style and customization as far as your party and their moves.
Not to mention, its pretty easy to explain the basics:
Elemental rock paper scissors, physical and ranged "Special" sets of attack and defense, Pokemon evolve in a variety of ways, ALWAYS CATCH THE SPARKLY ONE, etc.
It isn't so great on the Role Playing aspect, but it would be a decent introduction to gaming.

Oblivion on easy? The skill system is a bit of a ***** but that's the only really difficult part.
EDIT: DA2 is about as easy as you get for the RPG elements, even if it's not as good as DA:O. For someone less initiated to RPG elements, it's a good place to start.

If she likes A Song of Ice and Fire, maybe she'd like Dragon Age: Origins (on the PC). They based it partly on ASoIaF, and it has similar themes.
This thread really got me thinking.
I wanted to echo "Dragon Age", because that series obviously has the storytelling chops to interest a fantasy reader. Then I started thinking about the fact that modern videogame RPGs are about 90% combat. Even if you set the difficulty to "non-existent" and the leveling to automatic, wouldn't most non-gamers be completely turned off by the sheer volume of repetitive combat in these games?
I could see a "mom" really enjoying the stories and characters and choices in a Bioware game, but you definitely spend the majority of your time shooting or stabbing things. This feels like a pretty strong indictment of where we are right now.

From what I read she's not really into Sci-Fi, but if she is, you could make her try Mass Effect, but it might not excactly be the best choice since it's not the easiest game out there.

I recommend Sacred 1, Diablo II, Fate, Torchlight, Neverwinter Nights series and the Gothic series. If she want's to try her hand at something decidedly more epic there is the Elder Scrolls series, Sacred 2, Arcanum, and Lionheart. Those are the ones my mom likes, anyway.
Oblivion or Fable 2/3. Preferably Fable because it's easier to get into and it has co-op so you can help her get the hang of it.
