I'm tempted to say almost all of them.
I'm really not a fan of boss battles, which is why I tend to skip playing games from Japanese developers...

God Hand bosses made me often yell "FFFFFFFFFUUUUUUUUUUUU..."

Castlevania 1 on the NES too, difficult to the extreme.

The two Predator youngbloods and the elder Predator from the new AVP on Nightmare mode screwed me up something fierce. They can't be assassinated, recover from a heavy stun very fast, use their plasma bolts with extreme accuracy, and if you die once, you start back at the begining of the level, fighting android snipers.

Oh yes. Your going to die... A LOT!
(Cookie for refrence)

Oh yeah, Alien campign by the way.
I miss LordKat... he was entertaining. :(

OT: Aside from the Persona 4 true boss, one part of me would say Lou from Guitar Hero III. That just might be a difficulty thing (hard for me), but... *shivers* I've beaten him once ever since the game came out. It's really difficult to keep up a metal song when he gets first pick on debilitating super power.

Doviculus. Trust me, if you don't work fast and know exactly what you're doing, you're going to find yourself neck deep in arrows, scissors, and raging beasts that will devastate you. Drowned Ophelia can also count in some regard, due to just how beefy her troops health can be. It's just... ugh...

What ever happened to him? I haven't seen or heard from him in a long time...

And everyone says that
Ophielia and Doviculus
were tough as nails, but I breezed right through them everytime I fought them.

In terms of raw gaming skill then I'd say the final stages of Ninja Gaiden 2 when it becomes a massive boss rush from hell (literally)

In terms of grinding probably:

I actually thought that the True End boss was pretty easy.

OT: My pick is from Digital Devil Saga.

This. In case you haven't noticed, this video here is part 1 of 6. The strategy the player is using is not only incredibly convoluted, but requires an IMMENSE amount of luck to work- it went badly wrong at the part where he swapped Gale out for Cielo and Dormina failed to put Cielo to sleep. See Cielo is normally weak to status effects, but has a skill called Null Sleep which makes him invulnerable while asleep, allowing him to survive Demi-Fiend's instant-kill Gaea Rage, which will normally wipe out your entire party no matter HOW strong you are. Normally Cielo would be the only survivor of Gaea Rage and would resurrect the rest of the party wheh he wakes up, but the player got "lucky" and Cielo rather uncharacteristically resisted sleep. Only by swapping back to Gale and hoping Close Call would allow him to survive on 1 HP (not a guaranteed thing) could the player even HOPE to recover. Demi-Fiend is more of a puzzle than a fight because if you are not incredibly exact with your strategy you will be anniliated by Gaea Rage (which is on a special timer related to how many of Demi-Fiend's summoned alies you kill). And all those uber-powerful skills you've unlocked which make you immune to everything? Yeah, you can't use them. If you even EQUIP an immunity skill, Demi-Fiend will Gaea Rage EVERY TURN until you're dead- and apart from Null Sleep and the single-use Close Call, there is NO WAY to survive it. Good luck.

Lucien from Fable 2. I mean, if you didn't have the foresight to have a gun or any offensive magic, you had to stand there and wait for Reaver to kill him.

In all cerealness, Shao Khan in Mortal Kombat: Shaolin Monks. You are already tired from facing Shang Tsung and Kintaro, and then you have to face the big man himself. Never did beat that game. Someday I will go back and conquer.

NO WAIT WAIT WAAAAIIIIIIT!

Banko from Kingdom of Paradise!!! That is seriously a TWO HOUR PLUS fight. Running around trying to stick certain swords in the floor when specific bubbles popped up, and then you could use that kind of attack on him for a little bit. Eventually some of the swords will finally stick in place. Unlike Shao Khan I have beat Banko though, so I guess it is more possible but tedious, annoying, infuriating, irritating, and obnoxious.

False King Allant, Demons souls. He only had 1 stage. He used soul suck, which depending on your level might be a fortune to repair. Followed by the fact he was a master at spamming attacks

Probably the Sephiroth fight from Kingdom Hearts 1.

God damn, that's probably the BALLS HARDEST boss fight I had every undertaken.

If you've never had the "pleasure" of fighting him, let me break it down:

He has more health than any other enemy in the entire game. He has SO much health, in fact, that when you first start fighting him, his health bar doesn't even deplete. He actually has more health than the health system is designed to handle, so you have to beat 1 or 2 health bars out of him before he will even REGISTER damage.

His sword is frikin HUGE (seven feet long), and he can hit you from pretty much halfway across the screen... and that's BEFORE he starts randomly teleporting directly behind you to give you a steel suppository.

And, of course, there's the fact that he has his "Sin Heartless Angel" attack, which will Auto-Kill you if you don't interrupt it. And he likes to teleport to a random location on the battlefield right before he does it, breaking your target lock.

He's a tough freaking bastard. I was on the edge of my seat when I started trying to beat him for real (the first time I fought him, I was so shocked he was the secret boss that he killed me in 3 seconds, before I could react). Sweat, shaking, the whole nine yards. Now THAT'S intense.

Fucking hell.
THIS!!!! Fucking Sephiroth...

Pssssssh...... All of these are push overs compared to this japan- Arcade game.

Dunno the name, However got a video of it

Just so you know, that person playing Mushihimesama Futari, was playing very, very poorly. He made stupid decisions, tried to graze farm when he most definitely couldn't. It's not a good idea to show off when you blatantly use continues. Plus, that locks out the True Final Boss.

To add my own difficult game boss: Shou Toramaru from Undefined Fantastic Object on any difficulty. Stupid shitty, fucking, lameass, bullshit curvy lasers. They move quickly in arcs and are ridiculously difficult to predict where they'll go if they don't straighten out. To add to that, anyone in Double Spoiler who happens to copy said curvy lasers. And guess who makes an appearance in Stage 7 of DS? Why Shou "The Tiger-Patterned Bishamonten" Toramaru herself.

Shikieiki Yamaxanadu during Komachi's EX scenario is a very close second. Both Komachi and the Yama have 1 HP and start with maxed out spell bars. That sounds fair right? Shikieiki gets a two minute grace period before she can take a hit. Losing a life drops that down to fifty seconds which stll feels like forever. And while the timer is ticking down, the Yama is hammering you with some of the densest bullet spam in the game. I applaud anyone who can survive that two minutes. Oh and since this is the EX scenario, no continues, and you have to earn all of your lives, you don't start with extra.

Titan Quest's and Titan Quest: Immortal Throne's bosses can be extremely challenging, it really depends on how well is your char tweaked for that specific boss and how good you are at killing stuff. Some can make one-hit kills if they catch you umprepared, that happened to me a couple of times. It's a hack-and-slash game ala Diablo II but it's far more challenging.
The game is extremelly mathematical when it comes to counting damage done and taken, it takes in count your and your opponent's attack, base DPS, resistances, defence, armor, skills, all the passive, activated and sustained spells and every other factor it can and then formulates a result based on probabilities. I don't remember exactly what were those other factors because I haven't played it in a while but I recall it took in count over fifty factors, half of them where only visible though checking the game's code (Titan Quest and it's expansion are extremely moddable). I know this is what every game does but this was just a bit over the top, and this game is FAST, do something the wrong way and you are dead.

Fuck you Jinpachi Mishima. Instant Unblockable Stun, A ranged supermove that's near impossible to dodge, moves that can steal your health, AND worst of all, he's smart enough to sidestep. FUUUUUUUCK YOOOOOOOOOOOOOOOOOOU!!!!!!!!!!!!!!!!
Ahhhhh yes, Jinpachi... He came to mind, but considering I eventually beat him with every character on Tekken 5 and then Tekken: DR, I can't count him. Azreal (sp) is just as hard. But ya, when I was first playing it took me like, 50 tries to beat him with Lei Wulong. I mean, he has a giant mouth that suits energy blasts which take out a big chunk of health, which he can use up to about 3 times in one round, and he can fire two off in a row! And he can pick you up and steal health from you.

Thank you so much, as it is wonderful to know somebody else hates Jinpachi as much or even more than me.

Picture, if you will, this scene from a top-down perspective.
Oh man, those Prism River sisters.. ah well, maybe they were just a fluke. What's next?

A ghost girl? She's kind cute, but she can't be as bad as 3 on 1... FUUUUUUUUUUU-

To put it in concise terms for people who haven't played it. Have a friend throw handfuls of MMs out of a bucket at you. Dodge them. You dodged right? The boss just shot you in the back.

The boss's projectiles are so fast that she comes with bullet time so you have a chance to dodge. And it's still hard.

Also, Pyramid Head? Seriously? You don't even have to do anything.

Pretty much any of the Elder Dragons or Wyverns from Monster Hunter Freedom Unite.
However the one I hate the most would probably have to be either Shen Gaoren, I was stuck on him for weeks until my save profile of 150 hours got deleted (at this point I raged a bit) or Cephadrome, He wasn't necessarily hard it's just that whenever you tried to battle him 20 Cephalos would show up and he would burrow into the ground never to be seen again, but yeah compared to these guys Tigerex (also from the game) is a walk in the park.

Oh god, I despise her non-spells. Weave back and forth constantly, do it again, stream, stream, rinse, lather repeat. Even if you can angle a shot from anywhere with Sakuya B, she is still a massive pain to fight.
