Most from the ones I have played are both from 10 actually which might explain why it's my fav:
1)Auron
2)Wakka

Least? hmmmm probably Vaan, especially at the beginning of the game every time he spoke I cringed. I dislike the squeaky voice acting of some of the characters as well. But it might be unfair to condemn them just for that.

Ooh, let me do it for each game. Favourite:

1: Fighter. They're just cans full of awesome
2: Guy, because he's Guy. Or Maria, because she doesn't wear pants.
3: The third onion kid. You have to wonder how he's related to the others.
4: Rydia. "Stop touching my butt!"
5: Bartz. No reason, really.
6: Edgar. He's a pimp.
7: Cid. I don't need to explain myself here.
8: Squall. I can empathize with him, really.
9: Vivi. If you say otherwise, you are wrong.
10: Rikku. Yeah, I had a crush on her
10-2: The off button on my PS2
11: Durpa doo.
12: Balthier is badass
13: Have yet to play this.

Least favourite:

1: Thief. They are entirely useless, unless you really want to use the Katana
2: Leonheart, because he does nothing all game.
3: The fourth onion kid, because he's a clone of the first
4: I would say Telah, but the spoony bard line trumps anything, so we're going to go with Rosa, the dumb bint.
5: Cara/Kara/Krile/whatever it is this week. Her grandfather is so much cooler.
6: Gogo. Lacking a back story really sucks.
7: Cait Sith. No explanation necessary.
8: Zell. He needs to shut the hell up. All the time.
9: Eiko. You are too young to have hormones, missy.
10: Kimarhi. Only character I've never really used.
10-2: Myself, for playing this game.
11: Cherry jam.
12: Everyone not named Balthier (and maybe Basch)
13: See above.

Most: Tidus(X), he just seemed like a really believable character.
Least: The Warriors of Light (I) they had literally no personality or character development whatsoever.

I've only played X and XIII so

Most Favourite:
Auron X (Pure Badass)
Vanille XIII(her voice sounds strangely British to me)
Snow XIII (If you look closely he will make metal bleed)

Least Favorite:
HopeXIII (him and his extremely small health bar)
WakkaX... ugh

Rikku (FF10)- Don't you wish you knew someone like her? She's so cheerful. Maybe for short periods of time at least, I could see it getting annoying after a while.
How about Vanille? I quite liked Rikku (still do, in fact), but Vanille seems to be the logical conclusion of the direction Rikku took. Vanille also has a bit more to her than Rikku does, in personality, backstory, fanservice, abilities, and practically everything else.

I really like Lightning (she does get more human and less...Cloud). Auron is pretty cool, as are Balthier, Terra and Shuyin. Balthier has the distinction of being the only character I actually liked in 12 (except maybe Vayne), a game which I couldn't stand, in sharp contrast to the horde of unlikeables from 7 (Reno is a notable exception), which was arguably my pre-13 favourite. Shuyin is in there only because he represented the correction of everything I thought was wrong with Tidus. Like that metal arm thing. Or the boots he stole from goofy. Or the hair he stole from Cloud (ok, that was the same).

My two least favourites are Vaan and Cait Sith, in that order. Vaan prevented me from going much of anywhere in 12, and the license system stopped me from trying again. Cait Sith was just so aggravating...he was so unlikeable that he stood out from all the characters in 7, and there's plenty wrong with that cast. Also, Reeve's a pussy.

Pretty sure that's Australian, and the same with Fang. I guess Australia took over the world before renaming it?

I think every guy in the FF universe bar Auron annoys me, they are all so effminate and refuse to fancy women like normal men :/

Anyway, I do like Sephiroth, Zell (despite the fact he can be a pain), Tifa and very few others.

Play something before Final Fantasy VII. Edgar was a womanizer, Locke had two female love interests; there was nothing effeminate about Sabin or Shadow. Cecil spent his entire game trying to rescue his woman, Kain was doing nothing but trying to kidnap said woman and keep her for himself. Edge was a total man-wh*re, Yang had a wife and was a martial arts master...

Where are you drawing these conclusions from?

Oh, and Zell made me want to punch kittens with gloves made of newborn babies strapped to my hands.

Biggs, Wedge, and Cid from any Final Fantasy, just because they are freaking venerable, as they manage to work their way into every Final Fantasy somehow.

For a character in a specific Final Fantasy: Vincent Valentine in FF7, he is dark, and he turns into demon's as well as being an excellent gunman, that's good enough for me.

Runner up: Kefka, who didn't love Kefka?

Most:
Celes Chere: Runic was very useful
Edgar Figaro: So were tools
Kain Highwind: Jump was a very good ability in FFIV
They all had great personalities as well

Oh and Balthier Bunansa Because he is plain awesome.

Least: Everyone in FF7, they had no personality whatsoever which was excusable in FF1 because it was on the NES but not in the PS1 (especially sicne in FF2 the characters had personalities and THAT was on the NES)

Don't you love how FFIV and FFVI had some of the most unique and memorable characters/stories? And yet most people hardly know of their existence beyond "the games that came before FFVII"

Yes, it's back when Sakaguchi was actually overseeing the crafting of the story and not just producing. I'm a firm believer that there should have been a rule that you had to play through both Final Fantasy IV & VI in order to unlock the ability to play anything past then. I think the entire community would have a different view of things if that were the case.
