To me, there was no Kingdom Hearts II, Chain of Memories, Coded, Birth by Sleep or 358/2 Days. The series ended with the first game... And I'm okay with that.

Nothing. There are things like "Lego star wars" that are blatantly not canon and would make no sense to the actual story, and there are things like "halo wars" which are made by completely different companies and have almost nothing to do with the source material other than the mythology, but that's about as close as it gets with me.
Considering something irrelevant or non canon because it sucks is completely fucking retarded. Especially when it's made by the same director/company (IE The Star Wars Prequels, Indy 4.) But hey, that's fanboy rationality (or lack thereof) for you.
